Incredible, the skills on display when he segments the chicken are fantastic to watch. He seems like a really entertaining chef too, it would be a pleasure to watch him cook.
having broken down chickens for yakitori myself (I'm just an amateur learning), I was dying when I saw how he breaks down the chicken. when it did the neck I almost cried, it always takes me FOREVER, he just flies through and I'm sure with infinitely better results. a true master

Because it doesn't matter if you know what they do. You will not be able to replicate it.
It's like Roubuchon, Jean George, Alsatian.. They all have cookbooks published with exact recipes. You can't replicate the restaurant level even if you tried

He is still nervous, means he cares so much about his art and his reputation; means he is not jaded, not complacent after years and years of experience and honing of his skills.

I love watching people that are passionate about what they do. It's almost magical watching them talk about it and then doing it, and this was no exception! Would love to go and experience it first hand.
ATS has perfected his craft, just amazing! What they didn't show is the cleanup, ordering of chicken, spices, charcoal Etc... Don't forget about paying his bills to run his restaurant as well as payroll for his staff. He does all of this with only 37 minutes of sleep a day.
Yakitori got me in here, but I stayed for the chef's passion and style.

For me. Controlling charcoal grill is one of the highest level of cooking. It is an expertise which most people even don’t recognize. Very very difficult to maintain. 👏🙏
