    INGREDIENTS
    2 lbs (908 g) ground turkey or chicken
    ¼ lb (113 g) carrots
    ½ medium (100 g) onion
    1 medium (150 g) red pepper
    ½ lb (227 g) mushrooms
    2 cups (120 g) coleslaw mix
    1½ cups (45 g) spinach
    2 tbsp (30 ml) olive oil
    7 oz (200 g) lo mein noodles or pad thai rice noodles for gluten free
    FOR THE SAUCE
    1½ tbsp (30 g) honey
    2⅓ tbsp (35 g) soy sauce
    1½ tsp (15 g) sriracha
    ¾ tbsp (18 g) hoisin sauce
    1 tsp (4 g) ground ginger
    1½ tbsp (23 g) water
    INSTRUCTIONS
    FOR THE NOODLES
    1. Prepare the noodles according to the instructions on the package.
    FOR THE TURKEY/CHICKEN
    2. Add some oil to a skillet over medium high heat. Add in the turkey and cook it until it has browned. Season lightly with salt and pepper. Remove from heat.
    FOR THE VEGETABLES
    3. Wash and prepare all of your vegetables. Cut your red pepper, onion, and mushrooms into thin slices so they cook quickly. Use a vegetable peeler to create ribbons out of your carrots. You'll want to do all of this prep work before you start cooking them, the cooking process goes fast.
    4. In a large pot, add some oil and add the onion. Cook for 2-3 minutes or until they have begun to develop color.
    5. Add in the coleslaw mix. Stir and cook for a minute or two.
    6. Make room in the pot and add the red pepper to the pot. Allow them to develop a bit of color then add in the shredded carrots and stir. Continue to cook until the vegetables have softened.
    7. Stir in the spinach and allow it to wilt.
    8. For the mushrooms I prefer to cook them separately so they can develop color. If you are feeling lazy you can throw them in at any point of the cooking process. I like to add them to a dry skillet over medium heat, salt them, and cook them until they have browned. Add them to the pot with the other vegetables.
    FOR THE LO MEIN
    9. Mix all of the sauce ingredients together in a bowl.
    10. Drain the water from the noodles and add them to a skillet with the sauce. You just want to toss the noodles with the sauce so they are evenly coated.
    11. Add the noodles and turkey to the large pot with the vegetables. Stir to incorporate and season with salt and pepper as needed.
    PLATING
    12. This recipe makes 5 servings. Divide your ingredients evenly 5 ways.

    I've been making a similar lo mein, but love the idea of adding the coleslaw mix. Definitely gonna try that next time. Great way to add some texture and bulk up the serving size without adding many calories.

    I've been freezing most of the recipes I've tried here. I freeze them in the container, pop them out, and then seal them in the Zwilling bags. I can't fit them in the smaller bags, so I add 2 to a larger bag. This way I can spend a little time each day, or a few times a week prepping these meals, stocking the freezer, and having variety throughout the week. These preps are so tasty! Thank you!

      "that don't break the bank" EXACTLY. I have bought a couple books and they just aren't really applicable to my lifestyle. Its as if I would be a professional chef. A lot of the ingredients I just wouldn't use again on many other dishes anyway. This guy gives convenient recommendations. His website offers everything for $50 a year which is worth it.

    This is really great. Next time I'll cook the onions, mushrooms, etc. kind of separate to brown them. This is a big recipe and you need a big pan for this

    Man!! I've been looking for some inspiration when it comes to my diet, this came as a gods gift! Looks delicious while beating lean. If you're not a fan of that sugar, I would take half that sugar and replace it with white whine vinegar. If anything, you should add it to almost everything. It gives a more context to all the flavours. Flavours need a little acid to really come alive.

      @hjf4a2 Yes it is, it's acid. But as he states himself, the acid brings something else to the dish that wasn't there before which enhances other flavors.

      Sriracha and other types of hot sauces already contain a lot of vinegar. I wouldn’t add anything more than what you already got in that sauce mix.

    Hi Josh. Do you use a dedicated source for your calorie stats? I've tried to calculate the calories on a few of your meals and am way off. (Usually, my total is much lower) Your meal preps have helped me achieve goals while actually enjoying my food. Therefore, when I prep some of my own ideas; I would love if my calorice calc's are in-line with yours. Thus, still achieving said goals. Big thanks

    The only criticism I'd level towards this is that that pan is too crowded for a proper stir fry, I'd suggest getting a wok or just using a much larger pan.
    Still looks great though and I'll definitely be making this

    Microwave heating hack. Cook a little longer with a reduced power and you won't blow out your mouth with lava. Also, add a little water for steaming purposes. On my microwave I do the following: Cook Time > 3:00 to 4:00 > Power Level > 7 > Start. We're cooking a longer than usual, and turning the power down from 100% to 70%.
