To me this is the best Chinese dish ever, it works wonderful with anything like bread,rice,noodles or pasta, and it's so easy to do, everyone should learn this.

Same, kudos to Nigel for introducing me to Chef Wang Gang. It's ridiculous how literally EVERYTHING on here is mouth watering. Not one bland dish so far. Even this one somehow manages to look ungodly good in spite of the basic ingredients employed.
1. Add in ketchup if the tomatoes are not that matured 2. A little rice vinegar in the beaten eggs can enhance the flavor 3. If you don't want the dish too soupy, skip the water starch part
minor tips: tomato paste is more accurate than ketchup. Ketchup is a kind of heavily seasoned tomato paste especially for dressing, while raw tomato paste is the one which carries the flavor of original tomato and wildly used in the cooking process.
@@gravel5858 actually paste and ketchup has their own name in Chinese which is 酱 and 沙司. Even ketchup itself is a Chinese-english word inherited from Cantonese.

最大的秘诀就是番茄酱,现在的番茄都是假番茄,炒半天还是硬的像个锤子,番茄酱可以让这些假番茄快速变软出汁

我猜是没放糖导致的,直接放盐会特别酸,放糖就不会。

一克白糖不会有甜味,只会中和番茄的酸味使其让蛋与西红柿融合,另外王刚师傅加番茄酱是因为现在的西红柿生长周期不够味道没有以前的那么浓厚加的
