  • Get my cookbook @ www.CaribbeanPot.com/CookBook/ #Fish #FishFriday #Lent As we kick off #FishFridays lets rock a Sardine Recipe.. Sardines seasoned, flour dusted and fried. Then we'll make a garlic, onion, scallion and pepper infused oil, to toss the fried sardines to give them a punch of added flavor.
    For this #pescatarian recipe you'll need...
    2 lbs sardines
    1/2 teaspoon sea salt
    1/4 teaspoon black pepper
    1/2 teaspoon curry powder
    1 1/2 tablespoon Caribbean Green Seasoning
    2 cups veg oil (for frying)
    1 cup all purpose flour
    2-3 tablespoon olive oil
    6 cloves garlic
    1 onion
    4 birds eye pepper
    3 scallions
    Season the oil with 2 cloves of garlic + 3 bird's eye pepper.

    Those sardines are the same that the PORTOGUSE GRILL, QUITEBTASTY, BUT I HAVE NEVER SEEN THEN IN STORES, LOOKING GOOD, as I recall back in JAMROCK,as a child .!🇬🇧🇯🇲🇯🇲🇯🇲🇺🇸🇺🇸

    When sardines are bigger and older they are called herring. I think that’s correct.

    In St.Lucia we usually roast the sardines/sprats and the second part with the herbs is always followed.
    I have seen some huge sardines here in Cali so I will definitely do the fry method.

    Yes, please! Include me as one of your fans who want a video about how to clean the sardines! A very important part of any recipe for fresh, harvested fish of any kind, IMO! I suggest that you plan to include some slow talking Chris, because you usually speak so fast that my poor hearing cannot keep up! Thank you.
    PS- I catch wonderful fresh smelts up here in the Yukon of Upstate New York. The little bones melt in your mouth if you let the fresh fish fry long enough in garlic and oil. I include a lot more garlic and I could care less about the lemon. One more tip- bacon! Yes, everything, especially fresh caught smelts, and sardines too, taste better with bacon!

      @@slowbro1337 I get them when I see them but fresh sardines are not available on a regular basis in Los Angeles. Whole Foods, wholesale fish markets in downtown LA and Santa Monica Seafood carry them at sometimes. Even the Asian markets do not carry them all of the time. They aren't even featured at restaurants on a regular basis. Frozen sardines perhaps, canned or jarred definitely but fresh are just not available all of the time in LA. If you know of a spot that carries them on a regular basis do share.

      My Jamaican peeps call them that too. Home, we call them jacks. We fry them very dry so we can eat the whole things, bones and ALL 💅🏽

      It's called Peppermate- It's a great pepper grinder and it comes with a reservoir at the bottom so you can measure how much you've ground. The only caveat is that if you ever drop it the plastic is liable to break.

    Hey I love sardines. Herring and Sardines have different taste and herring have more bones. Yes please do a video on how to clean the sardines 🥰

      Sardines are young herrings. When they're mature or fully grown they are called herring.

      It's really common for the juvenile of a given species and the adult to have a different common or culinary name in English, our language is the bastard child of more cultures and languages than I care to Google right now. You are forgiven for not knowing herring and sardines are the same thing. I didn't know that until my mid thirties

    Sardines are the small young fish and herrings are the bigger fish.

    You're going to have to try pretty hard to do anything with sardines that I don't like, they're so good, they're so good for you too, and they're near the bottom of the food chain so you don't get that methal mercury and various nasty things building up like you do in higher up the food chain predatory fish like tuna.

      @@caribbeanpot American Shad are the largest of the Herring species. They are native to rhe North Atlantic and spawn in fresh water. They were introduced to the West Coast and are prolific here. East Coast US has a commercial fishery for them. West Coast US uses them mostly as Crab or Sturgeon bait. My wife and I pressure can them with Thai and Lao Herbs, dissolves the bones and gives us good meat for Thai dishes. They are boney as hell and have a specific flavor.

    The difference between sardines and herring are their size. They are sardines when they are small when they bigger they are call herring.

    Sardines are fishier, higher in most everything but B vitamins. Omegas are close but Ill take Herring. Tender not meaty like sardines and less fishy? yes I do not like fishy fish. They are considered two different species. If your cooking with lots of herbs and seasoning/sauces then maybe can substitute sardines for herring. Sardines go bad very fast and therefore why they are canned most places. I didnt know they can get up to a foot? why are they killed so small? Mercury?
