  • Today we tackle the good old Baked Beans. Not Boston beans but rich tomato-flavoured beans. I could find a decent recipe or one that didn't have molasses in it either. So I just set about making my own.
    We make some up from tinned beans and we also pressure can some as well. I hope you enjoy it.

    Hi Stacy. You won’t be able to grow those beans as they have been irradiated. Although you can buy organic, you can just plant McGregors Kentucky Pole beans and sow them around October. They are very prolific and you will get a huge crop that are not stringy, freeze well and are just delicious freshly cooked. The more you pick them, the more they will produce, but towards the end of the season, allow them to grow fat, turning yellow. Pick them and dry them in the sun outdoors until they become crisp. The dried beans you produce will be much nicer than anything you can buy, and you can use them as seeds for the following year.

    Hi Stacey, thanks for this reminder about how yummy homemade baked beans are and for the efforts you are making to spread the know-how of preparing simple, healthy and cheap meals. I'd been married just a few months (mid 70s) when my mum called in for a quick visit. She saw my pantry only contained a bag of white beans and a can of tomatoes and she gasped in horror (brought up out in the wop-wops, our home larder had always been chock full of home preserves, cans and bulk supplies). I told her not to worry cos the next day was payday and I could make a good meal with the beans, tomatoes and the few vege in the garden. 15 years and 6 children later I was by then a solo mum managing alone and one of my kids favourite meals was Boston Baked beans (I used a bacon/ham bone to flavour them), served with homemade bread. Cooking mainly just for myself these days, but still do it like you, making do with what I've got or can buy on special and batch cooking. My pantry looks like my Mum's too, with home preserves, plus cans and basics bought when on special. And a full freezer now stocked to the brim - just squished in some of the last of the sweetcorn harvest.

    I never used to care for beans but one day I had the Borracho beans (aka Drunken beans) from my favorite Mexican restaurant. Then I set out to make my own. I make a HUGE batch and then freeze a lot of it. I use 4-5 smoked pork hocks to make "stock" and then go through the tedious task of picking all the meat off, which ends up being plenty of meat for the beans. For the initial "cooking" of the beans I simmer them for an hour in plain water then let them soak overnight, drain them, then use the "stock" from the smoked pork hocks and add additional water if needed. I also use a quart of dark Mexican beer (Corona Especial, I think), a couple of large onions, a couple heads (not cloves, the whole head!) of garlic, cumin, a couple fresh seeded jalapenos, fresh cilantro, and then just let them cook and cook and cook. They do not taste especially "Mexican" but man they are so good and satisfying on a cold winter day with some cornbread. Your beans look just as appetizing and I appreciate the bean canning lesson, may try that with mine as well!

      oh wow, your beans sound soooo good! Watties beans are very plain over here but are a staple pantry food that almost every house has. I will definitely be making some more pimped-up types of beans as well. Maybe one day you could sure your recipe and I can make a video of them.

They do take a good day or so to make, what with prepping the beans and the smoked ham hocks, but truly are SO WORTH IT, and why I make a HUGE batch to freeze some. I'll have to dig through my freezer bag full of recipes this weekend and dig that out for you!

      I almost commented similar the other day! Someone who speaks out lingo (even though I’m Aussie!)
      I like to soak my beans over night then boil them until I get the end consistency I like (soft) But I’ve never canned them. Something I want to learn and so happy to find someone on our side of the pond!

      Hi Stacy! Over here in us I do plant dry store bought beans. I do soak them over night and have had great luck.
      I copy down your recipes as I am losing my sight and make my writing Big and with black markers to see them.😊
      I have been dry canning my dry beans with great success so I tried it with your recipe to save time. Heaping half cup of washed beans to pint jar or one rounded cup to quart jar and all your spices . Worked like a charm and then I made your baked bean soup. Sounded funny but I love it. Thank you so much pretty farmers wife!

    My mom made the best baked beans - in addition to what I saw you add, she also always added a squirt of prepared yellow mustard - it adds such nice depth. I forever running low on low brown sugar and have taken to making my own by adding molasses to a mixer bowl full of regular old granulated white sugar - whatever amount for the darkness and flavor you like. Oddly, I do as you do adding brown sugar and vinegar to my tomato based dishes - I really love that full end flavor! I just found your videos and am full on streaming them. I just love them! ❤ thank you so much for sharing!

    Butter beans are my favorite bean. Do the recipes in whatever way is easier for you; printable or screenshot. I agree, your taste buds must change because I like a lot of things that I didn't used to (I'm 54). The baked beans look really good 👍

    Yum I just LURVE baked beans.     Thanks for the video. I add a bit of dried mustard powder to my beans. Also cook with a ham hock or ham bone. Have never canned them before but do freeze.

      When I make baked beans I used dried mustard, a little ketchup, brown sugar and molasses. They are sweet and so good!

    When I do baked beans, I first cook dry beans in an instant pot pressure cooker. While they are cooking, I fry some bacon and quite a bit of onion. Then add in the beans, dry mustard, barbecue sauce, brown sugar, or molassas, all to taste, then let them cook for a while, adding a touch of water if needed. I've never canned them, but I am going to do that. It's a great idea. I usually freeze them in ziplock bags. Thank you for your wonderful videos. Keep them coming.

      The soaking of beans overnight or cooking for a bit and then rinsing before actually cooking the recipe is to remove the enzyme that causes gastric distress. So far all these recipes sound great. I usually use a Ball Book on canning to insure safety, as well as Not Your Momma's Canning Book. I haven't tried beans yet, but would like to. I've done beef stew (add the rue when opened and heated) and canned chicken, chicken soup (no noodles or rice as they cannot be safely canned). Of course, I've done jams, fruit butters, tomato sauce and paste, green tomato sauce (I like better than tomatillos), salsa and barbecue sauce, as well as applesauce and fruits. So many delightful things to try and I add one or two new ones each year. I want to try pumpkin and meals in a jar. This just popped up on my feed and been hooked since and save to Pinterest. I'm from the U.S. Happy cooking, canning and freezing - preserving wholesome foods without chemicals and fillers.

    Looks delicious Stacey😊I freeze my baked beans in thick reusable jars and that has worked a treat for me👍. I will definitely add sime balsamic to mine next time- I think our local Bin Inn has Navy and Haricot beans for approx. $7.90 per kg which is a LOTTA dried beans.     I can't stand parsnips or brussel sprouts not to mention chokoes. However, I did try bussel sprouts finely chopped & cooked in a frypan with butter & they were delicious, completely different taste. Chokos are great used as a pie filling. I found the recipe years ago from a country woman's column in a country town newspaper. It was cooked chokos, mashed & add golden syrup & lemon juice to taste with saltanas mixed in it to your taste preference. I also used to use the same recipe with mashed tasteless pumpkin in pies or you could use squashes as well because the syrup & lemon change the flavour & make veggies that are inedible, yummy as a desert with custard or made up as a slice chilled & a dob of cream on top!! I think it was a recipe that was used in the past as a poor man's sweet treat & probably started in England as my English grandmother used to be part of the country women's federation back in the early years & my mother was a pin up girl on the cover of one of the magazines when she was 17 years old, so that was in 1936. My grandmother was a fabulous cook & it was all done using a wood stove & oven. I didn't get the genes other than being able to make an excellent sponge but my pastry etc was used as frisbees.

    Add some ham for flavour! Can't believe the Americans don't have that at the big box stores, just tomato or tomato and cheese.
    We saw you tearing into your plastic bags to get the tomato paste out. We use the plastic freezer ice trays to freeze portions of the paste, then pop them into a bag. It's about one tablespoon each in size.

    Terranova seeds in NZ and Australia have a variety called Royal streak - it's excellent as a fresh bean but also as a drying bean. Loads of pods and it just keeps on producing if watered. Terranova supply growers so the packs are usually 1kilo but well worth buying - I have saved my seed for a few seasons and it comes true to type each time

    Our baked beans are not too pricey, yet, in SAfrica but the mushy peas are! So you've inspired me to try to make from dried split peas! I like your seasonings and adding the fresh veggies. Will also add a smoked ham bone if butcher has.

    Loving the videos, great seeing local content like this, used to watch a lot of US/UK videos but could never really find ingredients or equipment they mention.
    I also shop at Gilmours Hamilton, just a hint instead of freezing the tomato paste in bags, freezer it in portions in a large ice trays or muffin trays. Once they've frozen your can put all the pucks into large resealable bags.
    Freezer pucks are not just useful for things you've bought, but I also do it for home made stocks and things like cheese sauce. I really can't be bothered making cheese sauce for a servings of frozen veges with a dinner, but easy to pull out a few pucks as needed.

      Hi, and thanks for watching. I actually freeze my garlic and Ginger that way and after filming this video I now do the same with the tomato paste. I've just finished a gallon bag of it. I prefer the pucks method over ice cube trays. Lol, great minds think alike because I also freeze down leftover cheese sauce. Small world I may see you at Gilmours. :-)

    Cooked beans freeze well. I freeze them in ziploc freezer bags, I just partially thaw them, then heat them out of the bag in a sauce pan. Ziploc bags are stackable.

    When using dried beans I wash and clean the same as you but I've always just soaked them overnight in plenty of cold water. Then cooked as you do the next morning.

    I made these tonight, had to tweak them as I didn’t have balsamic vinegar, substituted with a little apple cider vinegar and Worcestershire sauce, followed your rule ‘my kitchen, my rules’ accompanied by the recipe you shared for those yummyl-icious crumpets, and yes the both were devine to consume ✔️👍🌸

    Stacy since it's hard to get dry beans there, here in America my dad would take store bought dry beans, plant them, then let them dry on the bean stalks, shell and there's your dry beans. Don't know if you have a place to grow them. But you can always have dry beans as long as you save some for planting.

    Both Butter Beans and Cannelloni Beans are great just added to a stew or casserole. Just empty a tin into the stew.

    Stacy would be nice to just screenshot the recipe and I save to a folder on my phone. We use phones these days for everything🙈when I need a recipe I just place my cell where I can read off it. I am sure many others do it this way too. But please keep the recipe close and spaced so it fits in the screenshot.👍👍💞

    Butter beans are delicious, but haricot beans make the best baked beans in my opinion.

    Love baked beans but not the tinned variety as they're too sweet.
    Cypriot/Greek style are the best as they're vegetarian (with sautèed onions, celery, and carrots), super-tasty and sugarless.

    We don't have Watties brand here in Canada, at least I've never seen them. But with the economy going the way it is, having canned bean on hand is a great idea. We have Bush's Beans, both tomato based and with pork, and they are considered the creme de la creme up here. There are several recipes on youtube, and if you are interested just type "better than Bush's" and you will get several selections. There is also a very nice tomato bean recipe at Keef Cooks. But your recipe here is definitely a keeper and will get a place on the shelves. We used to have beans once a week, usually with sausage, but I think we are up to at least 3 times a week now. Variety, even if somewhat subtle, is great. Bet they go well with your bacon.

      Hey, and thanks for your comment. I also make a Bush's type bean. I like to call them my cowboy beans, haha. For this video, I wanted to try to replicate our brand for a basic bean. There was a lot of interest from fellow kiwis for a recipe. Another viewer is going to give me her more pimped up beans, which I will also film. It's so interesting to learn what other people are making, and I'm really enjoying making some different recipes. I would love to do some videos with viewers' recipes, so if you think of something, let me know. 😊

    I'm going to have a crack at the beans they look good, do you think adding some liquid smoke to the mixture would work for a bit more flavour?

    Sadly, I discovered recently that cornflour is not true to name but is actually wheat, so I am now looking for another thickener that is gluten free. I found out the hard way by going to a Chinese restaurant & they told me everything was gluten free as they used no flour in their thickeners or batter. That night I was really ill & then it hit me later that they thickened & cooked with cornflour. I then remembered that I had read the packet of cornflour I had bought a few years earlier & discovered that it wasn't corn at all these days. I have the same issues if I eat meat that is from grain-fed animals. People say to me that they don't have a problem but my body rejects it & each time I consume it by accident the worse the reaction is. I have tablets to take but they only protect from ingesting a small amount not a whole steak!!

      What an awful experience! Chef here; there is the commonly available cornflour made from wheat, and there is genuine cornflour made from corn and gluten free. I hope you can find the genuine article in your location. Potato starch works much the same way, and is grain free.

    I can't stand BBs and brussels sprouts BUT hubby loves BBs so will make these and try them 😊. Brussels never goanna happen whole lot of yuk.Thanks for the vid and the printable recipe.

      I just buy big cans of it. Tomato paste is just one of those things that unless I have a huge crop of tomatoes to spare then I will buy it.

    If we don't have a canner could I just bottle as you did and use my stock pot but cook longer?

      No, unfortunately, beans need to be pressure-canned. You can freeze the cooked beans though. Others have done it this way with success.

      The canner must always have water in it. 3 quarts for pressure canning

    best bean for baked is the great white northern,, great choice, however,, this is nothung like baked beans,, omg,, i hv nv ever did baked beans on the stove top,, u hv no pork off any kind,, also,, nv ever hv i used corn starch slurry,, n u nv put any worchersshire,, mustard,, n so many other fab ingreadients,, bay leaves,, so weird,, especially only tomatpe paste,, not good,, sorry,,

      Hello, and thanks for watching. I make other baked bean recipes using pork, etc, and more flavorings. The video was to recreate the Watties Baked Beans we have over here in New Zealand. It is a simple baked bean recipe and is a staple over here. I plan on doing another video making my cowboy beans which have other added ingredients. We also have very limited types of beans available to us and they don't usually sell them in the supermarket. Different countries make things differently and that is great so we may try different ideas.
