  • Ingredients
    7 potatoes
    1 large onion
    1 bell pepper
    2 garlic cloves
    1.5 tsp salt
    1.5 tsp pepper
    1 tsp cumin
    1 tsp paprika
    1 tsp red crushed pepper
    (Not in video - optional)1 small carrot (optional - shredded or thinly sliced)
    2 or 3 tomatoes
    2 tbsp tomato paste
    2 cups of Chicken broth or vegetable broth
    4 tbsp olive oil
    1 tbsp of ground cilantro to garnish

    I made this and I was happy! I forgot the butter though. I added okra to it before I put it in the oven. So yummy! Thanks for the recipe!

    I'm a Filipino but I fell in love with this when I was in Kuwait. Who needs meat if the dish is as good as these potatoes. I can live on it not wanting any meat for a whole week. I love Egyptian food. Please cook fish singali.

    I've been making pretty much the same dish for several decades now... with some different spices but why would you discard the potato peel?
    Potato skin contains *.* Potato skin also provides lots of fiber, about 2 grams per ounce. If you eat a medium-baked potato, including the skin, you'll get nearly 4 grams of fiber, 2 milligrams of iron, and 926 grams of potassium.
    Scrubbing them clean is all that's really necessary. Stay safe.

    400 degrees for 40 mins, would it dry out the sauce, baking it that long.

      If you like more sauce (which is yummy with pita bread by the way :)) you can adjust the duration. It can only stay 30 mins if you prefer. I like it a bit on the less sauce side.
