You need to discover Indian food as well. Just leaving the meat and eat around didn't make me happy back then when my mom kept on like always. She prepared meat and side dishes. Bland side dishes as the meat and sauce was the star and got the taste in every meal. Indian palak panir still is my favourite food. Indian is the most exciting way of being vegetarian.

Dude! You're Ful Medames video changed my life! Fava beans are God-Tier, and I now eat them for breakfast 3 times a week. Finishing them with a little raw chopped white onion, and some very good olive oil, they are fantastic! Looking forward to try Salma's version with the chilli pickles (Tang Gang seal of approval).
Love it! My dad is Egyptian but we grew up in a Middle Eastern community with barely any Egyptians and I still remember the homemade falafel/tamiya he would make us at home. So bright green inside and so fresh tasting. It’s still my favorite type of falafel today! I would love to see an Iraqi breakfast 🙂

This looks AMAZING!!! Every time I visit Egypt, breakfast is something I look forward to. Fuul medames is one of my favorite breakfast foods of all time ever since that first visit! Now i make them at home when I have the time, I would nearly always have the inclination. :P It's so delicious!!! With chopped red onion, tomato, coriander/cilantro, extra olive oil and tahini...Cuddled right up to a couple of soft poached or sunny side up fried eggs so the rich yolk also mixes with the deliciousness of the fava beans and the hot pita bread (or even with buttered toast for a change if in need of some classic toast an jam too. it all goes and the full fusion is flawless to add any tasty bits of other leftovers, or handy fresh vegetables. Egyptian breakfast is the bet way to add salads and fresh vegetables to breakfast beyond a simple cucumber sandwich and tea (which is also wonderful anytime, but can't beat the full fuul and eggs and the whole breakfast! Yum!!!
I live in Canada and I'm so tired of our breakfasts. I recently started eating falafel and hummus for. It's such a nice change!! I can't wait to try the eggplant and the spicy ful. I'm vegan so I might have to try some substitutes for the other egg/cheese items lol. Yes, please share more breakfasts for us poor north americans so we can eat better, lol

The worst part about delicious breakfast foods as an adult living alone is that you can't have them immediately after waking up - you've gotta make them all yourself first! These look so delicious that it definitely seems worth it!! (I do miss that aspect of childhood simplicity though.)

Yummy. Yes there's something about the incredible crunchiness of Egyptian falafel... the best in the world! My Egyptian mother-in-law would make the eggplant dish but used more garlic than chilies. Addictive! I make my own version of Egyptian foul - except I use canned refried beans instead. Mixing tahini and date molasses is a taste sensation that too many people mix out on. It was nice to see you and Salwa eating in your dining room.

This sort of thing is why I like cooking - it's a cultural exploration for me! I LOVE the idea of the spicy pickled aubergines with falafel in a pita. I'm not sure anywhere sells baby aubergines around here - how is it done with fried slices?
I’m Egyptian and, always liked our pickled aubergine with breakfast but since I got married to a Syrian and being introduced to their version of the stuff (Makdoos) and I can’t have a breakfast without it, it’s heavenly with minced walnut and red peppers for stuffing . You could just have it with bread and be satisfied . Frying doesn’t work for these dish, though
It’s can’t be done with fried slices, however what I think they meant is that you can use fried aubergine slices instead of the picked ones and it would taste delicious in the pita with the falafel as well
It can be done with fried slices, but won't be exactly the same. Check my aubergine pickle video, follow the same frying steps, but then spread the chilli sauce on instead of garlic sauce. The boiled ones are softer, but in the end the taste is what matters.

For those hankering for fiteer I've found Indian paratha is a good replacement. Not as many layers but you still get the buttery flakiness. The frozen ones take about 2 minutes each to heat up on the stove.
This was a fantastic video! I enjoyed the format (both of you at the table explaining the dishes), tips (yes, yes, yes...always put that burned side down), and learning some new things (eggs and falafel batter? 10/10, will make). For the countries I'd like to see I'll start with Lebanon, Jordan, Syria, Cyprus, Turkey, Saudi Arabia...or, you know, all of them? Breakfast Series?
The funniest thing about Pastirma is, that anywehre in the world (and I mean 3 continents I visited), every time I get a hankering for it, I find the same brand with 8 languages on it. Ah, my beloved Rinderschinken

I enjoy like you my mother-in-law’s Egyptian breakfasts and this is as close as one would possibly wish outside Egypt! :) bravo 3leko. When making fuul out of a tin, we go for the plain fuul from Sofra, it’s just the beans and water, and you can do your own dressing. The supposedly’Egyptian’ tin comes in that strange seasoning that really messes up the product. Great tip mixing soft cheese and feta to achieve the gebna beida effect. PS. We buy the same Turkish bastirma brand 😂 pricey but it’s the best and closer to Egyptian bastirma. Keep up the amazing work guys.
I think your falafel omelet looks great! I love pancakes dark; grilled cheese sandwiches dark....yummy! Will definitely be trying several of these recipes. I am not one to deep fry in oil but would love to try the falafel batter and add the egg and turn it into an omlet. Thank you for so many great, new dishes to try🥰
You guys are changing my life! I made your Iraqui dolma for a recent Mediterranean dinner party I put on for a dozen or so friends. It was supposed to be a “ Turkish/Greek “ dinner, but it ended up being representative of cuisine from all over the Middle East. The dolma were the biggest hit!
What I like is the so natural way these videos are made. Not every thing goes right and that's great because it helps to see it doesn't have to be perfect first time and it still tastes good !

Pastirma and eggs is SO good. I will definitely try the pickled aubergines and the falafel recipe. Everything looks so delicious.

This was a fantastic video! I enjoyed the format (both of you at the table explaining the dishes), tips (yes, yes, yes...always put that burned side down), and learning some new things (eggs and falafel batter? 10/10, will make).
For the countries I'd like to see I'll start with Lebanon, Jordan, Syria, Cyprus, Turkey, Saudi Arabia...or, you know, all of them? Breakfast Series?

We lived in the Gulf and we love Mid-eastern cuisine. My best on this breakfast table is the fallafel and we make it at our home. Could you do some Saudi dishes, the country has many regions and its cuisine is one of the best. Thanks for sharing.
I enjoy like you my mother-in-law’s Egyptian breakfasts and this is as close as one would possibly wish outside Egypt! :) bravo 3leko. When making fuul out of a tin, we go for the plain fuul from Sofra, it’s just the beans and water, and you can do your own dressing. The supposedly’Egyptian’ tin comes in that strange seasoning that really messes up the product. Great tip mixing soft cheese and feta to achieve the gebna beida effect. PS. We buy the same Turkish bastirma brand 😂 pricey but it’s the best and closer to Egyptian bastirma. Keep up the amazing work guys.
I think your falafel omelet looks great! I love pancakes dark; grilled cheese sandwiches dark....yummy! Will definitely be trying several of these recipes. I am not one to deep fry in oil but would love to try the falafel batter and add the egg and turn it into an omlet. Thank you for so many great, new dishes to try🥰
You guys are changing my life! I made your Iraqui dolma for a recent Mediterranean dinner party I put on for a dozen or so friends. It was supposed to be a “ Turkish/Greek “ dinner, but it ended up being representative of cuisine from all over the Middle East. The dolma were the biggest hit!
