Ingredients:
Bacon - thick slices
Brown sugar - ½ cup
Bourbon - ¼ cup
Maple Syrup - 2 tablespoons
Worcester sauce - 2 teaspoons
How to:
Heat the bacon until it starts rendering down. At around 180 Celsius or 360 Fahrenheit.
Mix the rest of the ingredients and brush it on the bacon every 10 minutes.
When the bacon is fully crisped let it cool down.
Suggestion make a BLT out of the Billionaires Bourbon Bacon
2 slices of bread
1 tomato
2 tablespoon mayonnaise

I've been making Bourbon-Bacon for some time, by simply adding 2 fingers of bourbon to the meat in my cast iron skillet, (NOTHING ELSE!) and flipping once. Comes out tasty and crispy!

So much easier to make the Bacon Candy...
the only thing I do different .. is I put the mixture on at first
and let it cook... not cook the bacon first then the cause... you
need time to cook off the bourbon (alcohol)... so it won't be too strong.

Thats a good idea slicing your own. Candy bacon is like jerky, i eat it not stop till its gone, it never gets a chance to go in a recipe!

Pitmaster X I have a question about a previous video. I have in my freezer a large skin on pork belly and was going to try a porchetta.
When you did yours, what internal temp did you take it to before starting the skin crisping process? Would you recommend 160 F, or maybe 150 since there will be some carry over plus the crisping part?
I was thinking of smoking it on a raised rack as I don't have a rotisserie, and finishing the skin in a hot oven.

When you smoke it.. the skin will look horrible. I suggest going for the almost yellow crunchy skin. It will make more than up for the smoke flavor. Finishing in the oven is actually a great idea especially when you have top grilling heat.
Cook your pork until it is cooked 65 Celsius 150 Fahrenheit. Then roast the skin in the oven.... you will love the flavors it tastes so good!
