Super crispy pork belly

    Today I will show you how to prepare super crispy pork belly with a few simple tricks.
    For our crispy pork belly you need the following ingredients:
    - pork belly (in the video I use about 800 grams)
    - Salt
    - Vinegar
    For the sauce:
    - Fresh chillies
    - Fresh garlic
    - Fish sauce
    - Lime juice
    - Sugar (if you want it sweeter)
    my tips
    Prepare the pork belly one day:
    - Boil the day before in salted water for about 30 minutes at a low temperature.
    - When the pork belly is still lukewarm, perforate the rind well (this is very important so that it gets nice and crispy when frying!)
    - Cut the rind down to the flesh.
    - Marinate the pork belly well in salt
    - Soak the rind in vinegar for about 10 minutes
    - Leave the pork belly to dry in the fridge overnight.
    - When frying, first place the pork belly in the hot oil with the rind side down.
