My very dear friend Laurena is from St Lucia and she bestowed upon me the pleasure and privilege of visiting your beautiful country and her amazing family in 2012. I remember many unique foods she and her cousin showed me (I am Chinese-Canadian so food is a serious subject in my culture as well). I recalled her eating paime and made it for her since she could not visit home this year. Thankfully I got your recipe right. She said it was like Caribbean sunshine brought to her balcony :) I'm not kidding, we live through some SERIOUS winters here in Montreal, Canada! (can go to minus 40 Celsius, sometimes frozen rain, 30 cm snow). So just want to express my appreciation, and I'll be looking at your other videos for inspiration to keep her spirits up. xo
Let me just say that I enjoy your all your recipes. I am from St. Vincent and we make something something similar to this. Instead of corn meal, we use grated sweet potatoes, yams and sometimes Tanya all together with the coconut and spices. We call it ducuna😋😋😋 so delish!!!!
I was telling my mother that you can find anything on UA-cam. Asked her to pick a topic and she said how to make Paime. Found your video and made it for her today. Never had it before since I don't like corn meal but your recipe is very tasty. I now like cornmeal and Paime. Merci en pil.

Can white cornmeal be used, and if so would it taste the same or would I have to add more sugar. Basically what I'm asking is does it affect the taste if I use the white cornmeal? Thanks love your videos

In Jamaica we make this too and we call it Blue Drawers or Ducana depending what part of the Island you're from.

Here in Jamaica, we call it blue drawers or dukunu .We extract the juice from the coconut and use it to mix the ingredients instead of using water.

I don't live in the UK but here in Canada we can get it from the Asian stores. They keep it in the freezer.
