  • Antoine Lewis is a Food & Wine writer and columnist for the past 20 years. His love of good food is matched by his love for digging into the origins of dishes and the cultural practices and histories that shape what we eat and why. Throughout his career he has eaten at, and written about, most of Mumbai’s restaurants. His ideas of food and cooking varies from others.       This is TEDx. so standards aren't required for production. But, the AV quality both feel of the 80's, as does his hairstyle, soooo.

    This perspective was exactly what I needed!!!! I've pondered this notion of the value /necessity to be "authentic" or traditional when cooking. How can say "Ahhhhh" and let you know my soul and mind exhaled. I felt lost bc I dont adhere to traditions when cooking and I've felt guilty and more like a failure nc of this. Since cooking is one of my life's joy I've been miserable for many years now. Thank you! I'm going to return to the kitchen and have fun again cooking baking and entertaining!!

    Authentic food is not better, but I do think it's more interesting. Cultural history and traditions are wrapped up in food.

      The point is there are NO authentic foods. People have always shared recipes and ingredients and thus it's always changing.

    The only authentic food is that which you grow or forage yourself, or procure directly from those who do. All else is industrial subterfuge.

      Another way of looking at it is the only authentic food is something with precise traditional recipe, as the key idea is repeating a previous meal exactly. And, in practice this is nearly impossible.

    I think ppl mean they want to find food that hasn't been adapted to suit the western pallet. I think ppl want that because they want to understand more about the place the food is from. Food can be authentic.
