You’re the first person I’ve seen make guacamole with garlic and without tomatoes. Personally whether or not it’s traditional I just like it. I don’t put jalapeños in mine because I just don’t like spicy food. I’ve come to the conclusion we all make things the ways we like them but ultimately ideas are always a great way to get people into the kitchen.

I love guacamole with tomato. I’ve always eaten it that way. When I eat guacamole without it, I feel like I’m eating avocado pudding. I think besides flavor, it adds a nice texture!
A great tip for stopping the pepper burn is to wash off the oil with rubbing alcohol then follow up with coating the area with plain yogurt for a few minutes. Also it looks like those might be serrano peppers which are smaller and a little spicier than jalapeños. I love your channel and always look forward to new posts!!
I always use tomatoes in my guacamole. I use Roma tomatoes that I remove the snotty seeds to prevent the guac from becoming too wet. The tomatoes also add a bit of color. I also use homemade roasted garlic that I finely diced in my food processor. The roasted garlic mellows out the garlic bite with a hint of sweetness. Sorry, no Cilantro in my guac, it tastes like soap to me. Love all your videos. Hope you enjoy your new digs in Connecticut.
I have a young friend from Mexico (she's only 19) - she made us the best guac i've ever had - she used an entire bunch of cilantro, juice of 3 limes - crazy with the salt, no onion or garlic - used cayenne pepper, actually added milk (?? like 3 Tbs.) - in my cuisinart - it was amazing
Every thing John makes is scrumptious but as a Californian, Guac is much simpler here. No garlic, but seeded tomato plus white or red onion, lime and salt. It lets the avocado shine! I use only a pinch, and I rub it between my palms to crush it and release the flavor. Occasionally I'll fry my own tortilla chips or tostadas if I want really good chips. I like to add a bit of fresh salsa Fresca (drained slightly) or chopped fresh tomato if it’s really a good home grown one . I think it adds a lot to the guacamole ., though I wouldn’t kick yours out of bed ! A good tomato is definitely more than filler . And personally speaking , if I make guacamole , I specifically have salsa or tomato to add because I think it’s important . By the way , I notice your beautiful cooking equipment . It’s always the best quality .
authentic Guacamole includes tomatoes and does not have minced garlic. Even tho this version looks bomb and now im going to try it with the garlic and see how that changes my recipe! :)

After burning my hands with peppers, I learned that washing your hands with salt will remove poison oak oils (use it like a soap, rinse, then use real soap). So I tried that after cutting up peppers the next day or two and it worked perfectly! I do this every time now.
An alternative I use for minced garlic is I buy and mince all the garlic at once and store it in a jar w olive oil in the fridge and I have minced garlic whenever I need some. Plus the infused olive oil keeps the fragrance of the garlic and its sooooo good when you just need a tiny taste of garlic. 😋
Vinegar! The next time you have a situation where you get the oils of the chilés on your fingers, soak your fingers in vinegar. Trust me, I have a lot of experience in this. 😉🇲🇽

First of all, I want to say that your videos are A-mazing. You get a recipe and comedy all in one, your recipes are awesome, your presentation is on point and that humor just puts everything over the top. For me personally tomatoes add that extra zing to the guacamole. I usually use a lemon juice and sugar scrub to help sooth the burning sensation you get from the chile oil.

I am a fairly late entrant to Avocados and so far have been using it only to make salad dressing and dip. I had once tasted guacamole in San Diego and now I am happy to learn from you how to make it. Will try it with and without tomatoes. Felt bad about your burning fingers. FYI here we chop onions right after cutting chillies so the fiery sense is dulled by onions. If the fingers start smarting despite that or we dont needto chop onions at that time, we dip the fingers in some flour fir a minute or so (here we use ragi flour for that, but you can do with wheat or APF also). Then wash the flour off. Most of the fiery sting is taken off. I put unripe avocados in a bag or box of raw rice and they ripen pretty fast. Didn't know about placing them with bananas. Thank you. I made Fried Avocado Balls for the Avocado Festival in Carpinteria, CA. I added a honey dipping sauce with it. amazingly delicious. Just make your guacamole and add panko bread crumbs to tighten it up some. Use a scooper to make into balls and put in freezer to firm up some. Dip in egg wash then panko bread crumbs and fry. So yummy. Dip in honey for extra magic. 😁. By the way I'm a fan of the tomatoes in a guac. 👍
Mexican here. Yes, tomaotes can definitely go into guacamole. Many people like it that way. That said, we almost never add garlic. Certainly not as much as he used.

Mexican from Veracruz here ☝🏼, no tomatoes . Although I can’t say “the original guacamole has to have or doesn’t need tomatoes”. Every state and region in Mexico is different. Nevertheless here in the United Sates where we live we follow the no tomatoes kind. Awesome job John!!! 👏🏼👏🏼👏🏼

This recipe is closer to the way we do it here in México 🇲🇽 ALSO I'm so glad you did not use garlic, mango (I CRINGE everytime someone puts mango in the guacamole 😭) or CUMIN, 'cause contrary of popular believe, not every mexican dish has cumin in it!!...... I add tomatoes to mine. My family loves tomatoes. I chop them very small though. I think you got serrano chiles not jalapeños. I believe serranos bring a bit more heat than jalapeños but I could be wrong. Love the recipe. Will defiantly try it and see if the fam misses the tomatoes 😬
To get the oils from the hot peppers off your hands pour a few tablespoons of any cooking oil into your hands and rub them together very well for a few minutes, wipe off with a paper towel then was with dish detergent. Oil melts oil so cooking oil helps dilute the chile oil into a thinner form that dish detergent can now break down.
I love tomatoes in in my guacamole. I just make pics do gallo and toss it into the mashed up avocados. Also, I love.....wait for it... a little mayo and hot sauce in my guacamole too. I know blasphemy but it’s sooo good. FYI: I did a blind taste test of fresh garlic and mashed up garlic in a jar with several recipes, no one could tell the difference. I think professional chefs use the jarred garlic too sometimes.There is no way they could chop up gallons of garlic every day. IE: pizzas etc. Not cost effective. Thanks for the yummy recipes/video.
5 things remove oil from skin. Starches (cornstarch), alcohols (vodka or rubbing), acids (vinegar & lemon juice), baking soda (with water to make a paste), and oils (grapeseed oil). Yes oils. And I have found oil works the best for me. It varies for different people I have chatted with about this. What I use. Combine equal parts salt or sugar with grapeseed oil. You can soak your hands in as you scrub off and on for a moisturizing spa experience. Oil removes oil.
I don’t know if this will work for burns from jalapeños, but using lavender essential oil after burning yourself on a stove top or something works WONDERS. Seriously, if you put it on immediately you won’t even feel the burn again. Worth a try with jalapeños 🤷🏻♀️
Your guacamole looks delicious. I used to have an avocado tree that produced enormous, creamy avocados. Then I turned forty and became allergic to them. I wish that I could still eat them without getting sick because your recipe seems perfect.
I thought guacamole was disgusting until I actually had it fresh ...like omg! Premade store and many restaurants are just terrible, now I make it all the time. 💚🥑 I prefer tomatoes but with most of the juice taken out. I usually dice all the ingredients and crush 1/2 to 3/4 them in a molcajete and add the rest and after. Got to have some course texture. ✌😁
Yum! Looks wonderful. Nice tip using the lime juice on the onion. I will sometimes add a bit of salsa to my guacamole to get a depth of flavor...but I love the idea of “cooking” or pickling the onion first instead.
Finally! Someone who knows how to make guacamole. Every Food Network chef seems to ruin it with something like olive oil or they leave out the cilantro. I do like tomatoes in mine but that’s optional. I also like to put a small dash of cumin.
Most of the time I do add the tomato, however it doesn't need them as I never have just guacamole as the only condiment. If I use it on tacos, I always have tomato based salsa plus diced tomatoes on the side. Same if I just use it for chips, I'll also serve tomato salsa, green salsa, sour cream, diced tomatoes. Yes I have used it with chicken, which I do leave out the red tomato, I'll have a green salsa with the chicken. Now that I think about it I never have just vegetables with the guacamole like I might do with an onion dip. If I make the guacamole, I'll always get a bag of chips as well. Thanks for the video.
I love love love the tomatoes. Cannot imagine it being guacamole without tomatoes. I do not like cilantro & always omit it in any recipe. It is a personal preference I think.
hi john, im a big fan of yours and im Mexican. I think you should try OG Mexican guacamole, with tomatoes, white onion, with out garlic and jalapeño, mexican guacamole its never spicy and you should put the lemmon at last, that way the avocado won't oxide.
I like guacamole with a bit of tomato, but I'm ok without it. As far as I know milk works with the capsaicin in the peppers, but never had the need to try
Hey I can definitely sympathise re the experience dealing with the chilli seeds, I de-seeded some chillis recently meticulously and carefully in order to save the seeds from some fresh chillis. Wow, I got burning in my finger tips and even in tiny dry cracks in my skin I didn't even know were there, it definitely took a while to subside. I had to wear gloves going to the cornershop, my hands were sore! My suggestion is try soapy water with vinegar.. alcohol works too but vinegar is a magic ingredient when it comes to that subtle oils. Copious amount of hand cream also helped too lol.
I wish I could thumbs this up 100 times just for using garlic !! 😁 Definitely will try this with the red onion because hey...what's not to like about RED ONION. I use avocado's in my smoothies for extra creaminess. Perfectly ripened avocados....so it's not just another urban legend?!?!
My tip: Yes tomatoes Rough mince garlic. Add a fat pinch of kosher salt. Rub garlic into a paste! Cut tomatoes where garlic was smeared into a paste to pick up additional flavor. Serranos for the win! Wash hands with Dawn to remove chile oil. My secret is cumin and a splash of Tabasco. ❤️. White onions not Red but doesn’t matter lol Aguacate! You just said it. Guacamole: Guac is from aguacate Mole means sauce The more you know bbrrrrrring!! 😂😂
Yes to the tomatoes, as long as they're nicely diced with no seeds. Also, I don't like cilantro so I usually substitute parsley or just go without. As for your hands, a milk wash will soothe the burn.
No papi, tomate are an essential part of authentic Mexican guacamole. And if you are feeling fancy and classy (like you, handsome) you can use pomegranate or watermelon ;)
I actually chop the peppers first, then the onion (which helps kill the pepper juice on my hands) and then I chop tomato(es) - sorry John - using the natural juices from the toms to help cut both the onion & pepper juice before soaping my hands.
I’m Mexican and we always use tomato on our guacamole, if you don’t like spicy you use Serrano, if you like spicy use jalapeño, and if you want a kick put mango.

Mexican from Veracruz here ☝🏼, no tomatoes . Although I can’t say “the original guacamole has to have or doesn’t need tomatoes”. Every state and region in Mexico is different. Nevertheless here in the United Sates where we live we follow the no tomatoes kind.

OMG! Yes! Soggy tomatoes in the precious guac is a no NO.... This recipe is closer to the way we do it here in México 🇲🇽 ALSO I'm so glad you did not use garlic, mango (I CRINGE everytime someone puts mango in the guacamole 😭) or CUMIN, 'cause contrary of popular believe, not every mexican dish has cumin in it!!...... Sometimes if I'm being lazy I just mix the avocado, lime juice, salt and a liitle bit of water until it's soft and creamy and BAM! ready to eat ..... LOVE YOUR CHANNEL ❤️❤️❤️
I add tomatoes to mine. My family loves tomatoes. I chop them very small though. I think you got serrano chiles not jalapeños. I believe serranos bring a bit more heat than jalapeños but I could be wrong.

To get the oils from the hot peppers off your hands pour a few tablespoons of any cooking oil into your hands and rub them together very well for a few minutes, wipe off with a paper towel then was with dish detergent. Oil melts oil so cooking oil helps dilute the chile oil into a thinner form that dish detergent can now break down.
Avocadoes ara amazing with tomato rice dishes. Like african jollof rice. Serve that rice with avocado and banana slices- heaven! 💚
I love tomatoes in in my guacamole. I just make pics do gallo and toss it into the mashed up avocados. Also, I love.....wait for it... a little mayo and hot sauce in my guacamole too. I know blasphemy but it’s sooo good. FYI: I did a blind taste test of fresh garlic and mashed up garlic in a jar with several recipes, no one could tell the difference. I think professional chefs use the jarred garlic too sometimes.There is no way they could chop up gallons of garlic every day. IE: pizzas etc. Not cost effective. Thanks for the yummy recipes/video.
5 things remove oil from skin. Starches (cornstarch), alcohols (vodka or rubbing), acids (vinegar & lemon juice), baking soda (with water to make a paste), and oils (grapeseed oil). Yes oils. And I have found oil works the best for me. It varies for different people I have chatted with about this. What I use. Combine equal parts salt or sugar with grapeseed oil. You can soak your hands in as you scrub off and on for a moisturizing spa experience. Oil removes oil.
I love guacamole on cooked sweet potatoes. Most times I use guacamole in place of salad dressing.
I don’t know if this will work for burns from jalapeños, but using lavender essential oil after burning yourself on a stove top or something works WONDERS. Seriously, if you put it on immediately you won’t even feel the burn again. Worth a try with jalapeños 🤷🏻♀️
A restaurant I went to they added lettuce to the guacamole dip, it was good. I do like tomatoes in my guacamole. I also make guacamole tacos.

Yum! Looks wonderful. Nice tip using the lime juice on the onion. I will sometimes add a bit of salsa to my guacamole to get a depth of flavor...but I love the idea of “cooking” or pickling the onion first instead.
Rub used tea bag leaves on your fingers to remove pepper oils. Always works!
Finally! Someone who knows how to make guacamole. Every Food Network chef seems to ruin it with something like olive oil or they leave out the cilantro. I do like tomatoes in mine but that’s optional. I also like to put a small dash of cumin.
Most of the time I do add the tomato, however it doesn't need them as I never have just guacamole as the only condiment. If I use it on tacos, I always have tomato based salsa plus diced tomatoes on the side. Same if I just use it for chips, I'll also serve tomato salsa, green salsa, sour cream, diced tomatoes. Yes I have used it with chicken, which I do leave out the red tomato, I'll have a green salsa with the chicken. Now that I think about it I never have just vegetables with the guacamole like I might do with an onion dip. If I make the guacamole, I'll always get a bag of chips as well. Thanks for the video.

hi john, im a big fan of yours and im Mexican. I think you should try OG Mexican guacamole, with tomatoes, white onion, with out garlic and jalapeño, mexican guacamole its never spicy and you should put the lemmon at last, that way the avocado won't oxide.

I like guacamole with a bit of tomato, but I'm ok without it. As far as I know milk works with the capsaicin in the peppers, but never had the need to try
Yes, milk does stop the burn from peppers. So maybe he should soak his hands in some milk.
Hey I can definitely sympathise re the experience dealing with the chilli seeds, I de-seeded some chillis recently meticulously and carefully in order to save the seeds from some fresh chillis. Wow, I got burning in my finger tips and even in tiny dry cracks in my skin I didn't even know were there, it definitely took a while to subside. I had to wear gloves going to the cornershop, my hands were sore! My suggestion is try soapy water with vinegar.. alcohol works too but vinegar is a magic ingredient when it comes to that subtle oils. Copious amount of hand cream also helped too lol.

Rough mince garlic. Add a fat pinch of kosher salt. Rub garlic into a paste! Cut tomatoes where garlic was smeared into a paste to pick up additional flavor.
Serranos for the win! Wash hands with Dawn to remove chile oil.
My secret is cumin and a splash of Tabasco. ❤️. White onions not Red but doesn’t matter lol

Yes to the tomatoes, as long as they're nicely diced with no seeds. Also, I don't like cilantro so I usually substitute parsley or just go without. As for your hands, a milk wash will soothe the burn.

I actually chop the peppers first, then the onion (which helps kill the pepper juice on my hands) and then I chop tomato(es) - sorry John - using the natural juices from the toms to help cut both the onion & pepper juice before soaping my hands.
I’m Mexican and we always use tomato on our guacamole, if you don’t like spicy you use Serrano, if you like spicy use jalapeño, and if you want a kick put mango.
My husband hates onion, so I definitely add tomatoes or it’s just sad. Plus I love the acidic taste of tomatoes+lime. ❤️
