Variation: spread the meat mixture out on parchment, top with 1 cup of mozzarella & a package of pepperoni. Roll up & seal ends as best you can. Put in the pan as Chris directed. Cook a little lower 350f for about 1 hour until temp in several places is 165f. Divide into 4, drizzle with drippings. Taste like pizza meatloaf! We also have done ham & cheddar.
I always make a huge meatloaf; one meal while it's hot then chill it overnight, slice it and freeze two chunky slices per bags. Great freezer staple. Can fry it from frozen
I made your meatloaf recipe today. I cut it in half, cuz it's only me. Big mistake. It was soooo good I ate it all. Now I must make more. This is the BEST meatloaf EVER!!! Thank you!! :)
A meatloaf recipe without eggs or pork rinds! Thanks for this Chris, I’m allergic to nightshades, so I am so happy to have a recipe for meatloaf that I can actually eat too! You’re the best. Hope you and Ash had a lovely, much deserved honeymoon.❤
Left over meatloaf sandwiches are on the menu with your updated recipe for bread. Be still my taste buds . Oh yeah !. Meatloaf and carnivore mashed potatoes with gravey. I am all in. Thanks Chris !
I made this yesterday. i am impressed. My mother liked it, and my husband (a picky eater) said, "if I was given this at a diner, I wouldn't know it wasn't regular meatloaf". I plan on making two loaves next time and freezing one. Thank you for all you do.
The very best meatloaf recipe I've ever had (and everyone who has tried it that I know of agrees its the best meatloaf period) was by George Stella from his cooking show Low Carb and Lovin It. What made it special is he would form the hamburger part in a square on the parchment paper, then add a layer of prosciutto ham slices, then a layer of provolone cheese slices, then roll it up like a fruit roll-up and bake it in a normal loaf pan. I'm sure that part can be adapted to any meat loaf recipe, I highly recommend giving it a try.
I made a carnivore meatloaf while doing only ground beef/bison, eggs and butter using 1 lbs each ground beef and ground bison, 2 eggs and Redmond Hickory Smoked Salt. After seeing it was not going to stay together I remembered I had some Carnivore Crisp beef flour and added about 1/4 cup of it. It turned out great! This looks great, would never have thought of putting the meat in the food processor, have always just mixed by hand. Still need to try your gravies.
I modify the Diet Doctor meatloaf, meatloaf but wrapped in bacon and the fat that runs out turned into tasty tasty sauce. I might try blitzing the mince (ground meat in the US) as it can tend to be a bit crumbly.
Looks good. I use a mix of ground beef and lamb. Eggs, Ground pork rinds, grated cheese, bacon bits, heavy cream, salt, pepper and garlic powder. Cook on the smoker
OK this was hands-down, the best meatloaf recipe! It was delicious! I have never made a meatloaf without eggs and I love the fact that this doesn’t have eggs and has ricotta cheese instead and blending it together in the food processor . It came out, so nice I will definitely put this one on rotation.
This looks so delish! I love the way Ash looked at you when you were listing the different options! As if to say "you're killin' me here!" I agree Ash it ALL sounded so delicious! Especially adding the bacon. That's probably what I will.🎉❤ Thank you both!!!🎉❤
I love meatloaf! I usually make it with parmesan cheese and an egg to bind it, but definitely gonna try ricotta cheese! I never thought of using that and i love ricotta cheese! Thank you for this. Glad y'all are back and hope you had a great time!
Being on carnivore I really miss my Mom's meatloaf It was absolutely the best but it is not carnivore friendly lol So I'm anxious to try this recipe Thank you for sharing!!🙌❤️

Chris and Ash, we are watching your video and having our coffee this morning. Hope you guys had an awesome cruise. Enjoy your graphic and music and a shot of Mel into your video. Looking forward to trying this. Thank you. Have an awesome Memorial Day weekend. Thank you to all the men and women who have or are currently serving in our military forces.
What a way to start my Sunday morning. Now I’m going to pickup more ground beef. Meatloaf for a Sunday meal. Just like grandma use to make. That gravy though…mmm mmm mmmm
Im going with the pork and beef combo. Instead of Italian seasonibg, I'll go with a teaspoon of dried thyme and half a teaspoon of marjoram. Topped with sugar-free ketchup, it'll be awesome.
It’s in the oven now…will update once done! Update: OMG!! Better than I expected. Even the gravy is so delicious! When I cut into it it was juicy and not dried out. This is a winner in my opinion! Thank you for such a great recipe! 😊
wow that was fast. gotta get my large processor out of storage for this one. 3# is gonna last a while in the freezer. Snacks for weeks. Would love some jerky ideas. I got a nice dehydrator.
I was thinking that same thing about this gravy on your mashed potatoes….YES!….and then Ash said it for me! 😀 This reminds me of those delicious meat balls of your’s, using the food processor to make a meat “paste.” Sooo good! And yes, looks like Mel got called out for just lying around the kitchen again, looking all cute. 😂 🥰
Yes indeed! Those meatballs are so good. And the mash and gravy? Yes! I gotta do that soon. Lol Mel pretty much always lays around until it’s time to eat. 😂
I made the meat loaf as soon as I baked my fresh loaf of carnivore bread while watching this video the meatloaf is great and it doesn't take a ton of ingredients it's easy to make and I think may even be able to be made into burgers so thanks so much chris
Well... you did it again. I followed the recipe as written except that I added a pound and a half of some brats that were way too salty and, of course, decreased the salt called for in the recipe. OMG... it is so good. Perfect texture, stayed together even without added eggs (something I didn't think was possible) and the taste was excellent. Thx. You are my go to recipe guy and I've made a few things of yours. I haven't gotten up the courage to make the carnivore refried beans... but that may happen. LOL.
Looks great . I’m going to make it this week. If you partner that with your carnivore mashed potatoes, it will be over the top delicious. That’s what I’m gonna do. I eat those mashed potatoes all the time. By themselves or with something else. Love two two ❤️❤️
Hi Chris and Ash love you both! My second recipe I did was the hoagie buns! Second time around sucess! I made my own hoagie bun pans using the sm loaf pans from dollar tree, cut the ends on one siide slid the two end together got 8" took tim foil strips to connet them and a metal paper for extra hold finished with the parchment paper they came out beatiful!!❤
I am trying this recipe right now! I used to put bacon all around the top of my "SAD" meatloaf. Maybe something good to try in the future, for me, I mean lol. I am going to make this one as is. I am sure it will be delicious. Thank you for this recipe.
This is a really good recipe to try, especially for those on a tight budget looking for different ways to use ground meat. thanks man, you rock! Do you happen to have a chicken and dumpling recipe? The homemade kind like grandma used to make?
You know Chris you....yes YOU, got me hooked on ricotta cheese! 😂😂 I cannot remember which video, but you used ricotta instead of cottage cheese? I bought ricotta since hubby doesn't like cottage. I now sit eating tiny little spoonfuls of ricotta sometimes 😂😅 I had never had it by itself. Mmmmmmm❤ Anyways, I am so making my meatloaf like this next time, minus the garlic powder, another no for hubby. And the gravy looks so good! I can already anticipate how many spoons of ricotta won't make it to the processor, lol. Bonus-- my processor is small. Hubby asked if I needed a bigger one, I said no. Well..... "Oh honey....remember when you asked...." 😂I'm totally gonna ask for a bigger one now, for the meatloaf's sake!🎉
This looks like a great recipe and I can’t wait to try it! There is a recipe going around on TikTok right now for a flatbed wrap and it’s cottage cheese and egg. I would be interested in your take on this recipe. Maybe you’ve made it? My husband and I went and watched a lot of your videos today, but I still have more to go through. 🤣 thank you both so much! 😊😊
I'm a bit surprised by this one as well. I was fully expecting eggs or egg white powder to be involved; I never saw the ricotta cheese coming! I'm terrible at taking notes so I'm glad about your recipe cards. Also, I finally tried your velveting technique, once with chicken and another time with beef. The chicken came out great, no issues. The beef I had some trouble with. I mixed the beef and egg white very well but when I cooked it I got a lot of egg whites cooking up that I had to peel off the beef...
Yeah this is a fun one that gives a great final product. For the beef velveting it is possible there was not enough heat in the pan. You can also skip the egg white if you like and just do the seasonings and baking soda and gelatin but you won’t get the crispy outer layer quite as well without the bit of egg white to hold the baking soda and gelatin. Another approach is to use just baking soda and water and then use fresh water to rinse that off afterwards and then add seasonings and gelatin right before cooking and not use the egg whites at all. All approaches give a bit different of a finished product but you may prefer one over the other.
@@ChrisCookingNashville I see, I'm pretty sure the pan was very hot as the eggs cooked/burned instantly, the final product was ok. I'll try out those other methods in the future!
@@ChrisCookingNashvilleyou are 100% right on the texture. I am making your gravy on the first when my fast officially ends but I could not help my self I did a tiny slice with the butter egg yolk sauce it came out really good. I would do a higher fat ground beef to make up for the low fat of the venison in my version TBH.
Thank you for this, Chris!! I wanted to make a meatloaf this weekend because I miss meatloaf from my former junk diet days. Now I can make yours. Awesome! Thanks for what you do!
It would be GREAT to do a 3-4 day cruise as a group but have the galley take some of your recipes and create a carnivore/ketovore station in the buffet.
Today, I took a couple of thin slices of this meatloaf, took the chill out of in the microwave for 12 seconds and then made a “sandwich” with it. Put cream cheese, liverwurst and a little mustard on it. It was delicious!
Thank you Chris!!!! I needed a Carnivore Meatloaf Recipe! What brand of beef broth did you use for the gravy? It's always so good to see your new recipes, Ash taste testing the recipes & seeing Mel! You are such a warm & loving family. ❤
Thanks for letting me know. I usually use gluten free beef or chicken loose bouillon & mix with hot water. I found it’s less storage & it saves money. I recently purchased Beef Collagen powder from Bulk Supplements & been adding it to recipes.
I use the powder from time to time as well. It’s a good product for convenience and can be very useful sometimes if you’re okay with the ingredients. 😊 Beef collagen powder is a great addition to things for extra collagen. 👍🏼😊
Hi Chris, I'm going to try your recipe and I'm hoping, I'm really hoping that you save me on this carnivore diet that I've been on for almost a month, because I've made carnivore crack, and it tastes just like butter, and I just made carnivore brownies last night and they were spot on or what they were supposed to look like, unfortunately my garbage disposal ate them. I love meatloaf, and I'll give it a whirl. I have a food processor, but I think mine is too small, and thank you for your videos.
Thanks Chris! Can't wait to try this! I don't have ricotta on hand and won't be in town til next week...do you have any recommendations for what I could substitute for ricotta? I have on hand cream cheese, plain yogurt, and parm...would any of these work?
Hi Chris and Ash, great recipe! Is there a substition for the Ricotta? I'm doing pure carnivore, only meat but would like to add something that doesn't have carbs that might make it creamy. Also, (no judgment) but Ricotta is prounounced Ree-Goat-Ahh. Full blooded Italian here.😊😊💜💜
Hey there. If you’re looking for something creamy dairy is your only option here unfortunately. Proteins from meat and eggs all set firm when cooked, so I’m not sure how to sub anything out for it.
A Vitamix will try to liquify it and you'd only be able to do about a meatball size at a time. Just mix it in a bowl using your hands if you don't have a food processor and like it that dense. You could also mix it in a stand mixer with the paddle.
I agree with Patricia that a vitamix will probably try too much to liquefy everything. I think you’ll get a much better result mixing by hand or with a stand mixer. Just mix it a lot to break it down as best you can.
I can’t wait to try this! It’s Sunday morning here in Australia and I’m hoping to get a chance to make it sometime today. Out of curiosity, do you think that cottage cheese would also work, in lieu of ricotta? I’ve been trying to embrace cottage cheese more, recently 😄I hope you had an amazing holiday, and happy anniversary!
Hey there! Yes I think cottage cheese will work, but it can be drier so you’ll probably need another 1/2 cup of it and you’ll want to be sure you don’t overcook the meatloaf as it can get dry and dense quicker with cottage cheese.
That looks so good! I wish I’d seen this before I went grocery shopping this morning because I don’t have ricotta. 🙂 I do have cream cheese, eggs, sour cream. I’m thinking a little cream cheese might work ok.
@@ChrisCookingNashville I made it this evening. Cream cheese worked well, and it came out delicious! You can’t really taste the cream cheese, it just binds it well. Thank you! 😊

Hmm… interesting. Not sure why it would act so different on the beef than the chicken then. One of the other methods may work better for you then. 👍🏼
I am going to try this using ground beef, bison, and venison in the next few days
That sounds amazing! Let me know how it turns out. 😊
Perfect idea!
Thank you for this, Chris!! I wanted to make a meatloaf this weekend because I miss meatloaf from my former junk diet days. Now I can make yours. Awesome! Thanks for what you do!
You’re very welcome! Hope you enjoy! 😊
It would be GREAT to do a 3-4 day cruise as a group but have the galley take some of your recipes and create a carnivore/ketovore station in the buffet.
That would be cool!
Looks delicious! Putting ricotta on my grocery list. Thanks!
Hope you enjoy! 😊😊😊
Today, I took a couple of thin slices of this meatloaf, took the chill out of in the microwave for 12 seconds and then made a “sandwich” with it. Put cream cheese, liverwurst and a little mustard on it. It was delicious!
That’s a great idea! I’m going to have to try that.
Thank you Chris!!!! I needed a Carnivore Meatloaf Recipe! What brand of beef broth did you use for the gravy?
It's always so good to see your new recipes, Ash taste testing the recipes & seeing Mel! You are such a warm & loving family. ❤
I grabbed some College Inn to make this quick, but ideally I’d make my own beef bone broth if I could. 😊
Beef collagen powder is a great addition to things for extra collagen. 👍🏼😊
It looks awesome, Chris! Different technique than I have ever tried before, but I plan to give it a shot!
Hope you enjoy 😊
Looks great! Can’t wait to make it :)
Hope you like it! 😊😊😊
Totally understand. I’m here to help. Let me know what I can do. I hope you enjoy the meatloaf.
No food processor here. But I’m gonna try this for dinner tonight.
👍🏼
I was just thinking about meatloaf recently, going in my dinner line up this upcoming week! Looks great!
Hope you like it! 😊😊😊
Thanks Chris! Can't wait to try this! I don't have ricotta on hand and won't be in town til next week...do you have any recommendations for what I could substitute for ricotta?
I have on hand cream cheese, plain yogurt, and parm...would any of these work?
Hey there! Yes try a 50/50 mixture of softened cream cheese and Parmesan. 😊👍🏼
This looks amazing. Definitely putting on my list to make. Hope you’re having a fantastic time on your vacation.
Thank you so much! We had a blast. 😊
Really enjoyed the meatloaf jokes in this! 😂 Also, I love meatloaf!
Haha thanks 😁
Wow! Looks so yummy! Thank you for sharing! 🖖🏻😘👍🏻🙏🏻
Most welcome 😊
Oh that looks yummy I’m going to try that 🇬🇧🇬🇧🇬🇧🇬🇧
Hope you enjoy 😊
Definitely going to try this out
Hope you enjoy! 😊
Another winner.
Thanks 😊
Yum
😊😊😊
😂 love the pop up pics
Haha thanks 😂
Gonna have to do it by hand cuz i dont need a HUGE food processor for anything else 😥
That will work 👍🏼
Hi Chris and Ash, great recipe!
Looks delicious! Do you think I could do in batches with my vitamix?? Thanks!
Creamed cheese should do a decent job for you as well. 😊👍🏼
@@ChrisCookingNashville I made it this evening. Cream cheese worked well, and it came out delicious! You can’t really taste the cream cheese, it just binds it well. Thank you! 😊
Perfect. So glad you enjoyed it. 😊
Ash, I love your Elvis shirt. Huge Elvis Presley fan.
😊😊😊
