Chocolate cupcakes with vanilla pudding filling
Makes 6 cupcakes
Ingredients:
- 1/4 cup light brown sugar
- 1/4 cup granulated sugar
- 1/2 cup flour
- 1/4 cup cocoa powder
- 1/2 tsp baking powder
-1/2 tsp baking soda
- pinch of salt
- 1 egg
- 1/4 cup milk
- 2 tbsp oil
- 1/2 tsp vanilla extract
- 2 tbsp coffee
Frosting:
- 38 g softened butter
- 150 g cold cream cheese
- 84 g powdered sugar
- 2 tbsp cocoa powder
- 1/2 tsp vanilla extract
Filling:
- 1/4 cup vanilla pudding
Toppings:
- sprinkles
