How To Make Gorditas Enchiladas (Gorditas Norteñas) and Salsa Macha

- Hello my beautiful fam! Welcome back to my kitchen today I’m going to share with you how to make the best gorditas enchiladas or gorditas norteñas, this is how my grandma used to make,them, well the way she prepared her masa, because she used to cook them in a oven outside her backyard , horno de leña, i remember She used to ask me what I wanted from Mexico and that was one of the first things I used to ordered 😭 memories memories... the best part about cooking that through our memories we are able to reconnect! I hope you enjoy it as much as I do! Pots I use in my videos- calphalon
Blenders I use at the moment, Vitamix a3500 and Ninja BL770
Song at end of Videos: Lu-Ni Vamos ala oscuridad
Ingredients: makes about 13 gorditas
Salsa de aceite ( super spicy oil salsa)
2 oz 60 chiles de árbol
5 garlic cloves
1/4 onion
3/4 cup vegetable oil
3/4 cup olive oil
1 tortilla
1/2 cup sliced almonds
2 tbsp sesame seeds
1/2 tbsp salt
Filling: I also use this for my roll tacos 😉
1 lb ground beef
3 medium potatoes
1 tomato
1/2 white onion
Garlic salt pepper
Masa:
4 cups Maseca
1 cup flour
1 tbsp baking powder
1/2 tbsp salt
8 New Mexico, California or guajillo chile pods
1/4 white onion
2 garlic cloves
1/4 tsp cumin
1/4 tsp oregano
1/4 tsp black pepper
Oil
Toppings:
Lettuce
Tomatoes
Crema mexicana
Queso fresco
1 serving of love 💕

Enjoy this delicious recipe..... brings back so many memories I hope you love it as much as I do! Love you all 😘😘 i forgot to mention I use 97% lean and 3% fat for my ground beef if you use anything else, remove all the fat(oil) prior to adding the potatoes 😅

I love all of your recipes! My family has loved them EVERY time too! I wanted to ask if you can add how long it takes to make them, I dont get home until 6pm every night so I like to plan what to make on weekdays vs weekends. Anything that takes more than 45 minutes is for the weekend. Lol! (If not, we're not eating dinner till 8pm). 🤷♀️😊

Claudia you in that kitchen cooking some great food all tha time girl!!! Gosh mi abuela was the same. 50lbs of flour a week for everybody! I had 7 tios! Claudia, she made the best gorditas con pollo. She made a chicken & potato stew with onion, garlic, chile, cumin, salt & pepper. She'd fill the gorditas but put the lettuce, crema & cotija on top and we all are with knife & fork. She made the best pastel chocolate with cinnamon in it too! Omg I miss her...everytime I watch you it's like being a little girl again under my grans apron waiting & watching LoL. Thank you for your hard work & dedication. You're super amazing!🙏

Claudia, I like and enjoy your videos a lot... I have started learning how to cook and use a lot of your recipes. In a few months, my boyfriend and I are moving into a house and will need to get everything for our new house. You should make a video of your favorite kitchen utensils, kitchen knives, small appliances, pots and pans 😄😄. It will help me a lot as I have no idea what to buy 😢🤦🏻♀️
