Dont reduce the quantity of chilies. Just remove the seeds inside the chilies. Seeds that make it spicier.

As a Malaysian here, I'm so glad our food has brought joy to you both eventhough you guys came from afar. Thank you for reminding us again about the joy of giving to neighbours. Before covid, we used to do it all the time especially during Ramadhan. Giving each other & end up having more variety of dishes to eat (because the neighbours will return back too 🥰).

The best way to cook ikan bakar is by wrap the fish with tumeric leaf or banan leaf. . so when you want to flip the fish to bakar the other side of the fish, the flesh of the fish will not be fall apart ..so does the marinate. It will stay on the fish. Some malaysian also wrap the fish with aluminium foil after the fish is wrap in tumeric leaf or banan leaf.
That's the problem with chilis. One day you make them, not spicy enough. Another day with a different set of chilis, the pedasness suddenly through the roof. But you will still go through the pain eating it because its just too darn good.
Btw, that fish looks seriously delicious!

From my experience of buying ' cili kering', the ones imported from China is much hotter than from India....I dont know why we still imported those...heh?
hi iChang, i suggest that u can use Aluminium foil to cover the whole fish first, then bake. that will be more easier. I think Mr.Sazali can bake the fish directly without Aluminium foil because the fish got Fish scales and that kind of fish scale is very hard. and yrs i think is alr remove its scales, different kind of fish got different ways to bake. and after that, i see u use the banana leaf, that is also a good idea as well 👍👍👍
Aluminum foil is harmful to health. Some people don't know this. Go look it up.
To make sambal belacan use big red chile(not spicy) + small chile (spicy).
True.. it will give an enjoyable taste without too much pain...

Tips on how to grill the fish : you can wrap the fish in banana leaf before grilling or use fish with thicker skin fish like the one used by Sazali which is Ikan Cencaru…..plus if you want the Air Asam to be more delicious, use gula melaka instead of regular sugar

Wrap your fish with banana leaf during grill would also give good flavour or scent. Udang tak manis 😂, add a bit of 'gula' in sambal to reduce spicy taste
To make sambal belacan better, less spicy and more watery :
You can put some tomatoes to make it watery, extra lime for sour, and some sugar to reduce spicy + mix with big chillies(not spicy), use less the small chillies.😇 Also to make it more tasty, balance its taste with a little bit salt. Dont forget to try out ur sambal first usng your finger, so that u can adjust the taste before u officially start eating.

There is a old Malay saying "Orang Berbudi, Kita Berbahasa, Orang memberi, Kita Merasa" is exactly what you and your neighbor did. Also a trick to not make chilli too "pedas" is to first remove all the chilli seeds from inside the chilli pods, then a lightning quick stir fry the chilli before pummeling it into sambal. Looses majority of the "capsaicin" that make it too "pedas". For me if i ate something too "pedas" i would take a sip of cool milk and hold it in the mouth (dont swallow the milk too quickly) it will soothe the burning tongue and mouth quickly.
should wrap the fish in the aluminium foil with the mashed ingredients and cook it. taste will be amazing.
You should always wrap food in banana leaves before wrapping up in aluminium foil..

Sharing delicious meal with neighbour, a practice that most Malaysia hav been not doing it, so sad... I still does. When you grill the fish make sure you crush the bottom of "serai"..dip it in oil..and rub it on the fish to prevent the fish stuck to the griller..

Actually, when it becomes too pedas like that, just consume 1 table spoon of sugar and it will reduce the pedas a lot.
I think they both know that by now. Looking all the videos they made, I'd say i-Chang is an expert when it comes to some savory Malay dishes. Most of the time, she tries to cook them 'as Malay as she could', because she & Jimmy want the taste to be authentic. These two (especially i-Chang who had eaten the Malaysian Mamee Ghost Pepper Noodle) are no longer strangers to Malaysian spicy food. But whenever they feel spiciness of the food is too strong, they'd continue eating them. Japanese has respect for food. Even if the taste is not good, you hardly see them talk bad about the food, leave it unfinished or throw them away.

6:30 this happened in my childhood during Ramadhan, my Mom just cook 1 kind of food and we distributed to nearby neighbour , end up our table full of different kind of foods
IChang actually thats the way we do a long time a go especially at our kampung. We exchange the food and suddenly from 1 dish it can be more than 1 dishes on the table🤭. And this more often during Ramadhan time

Next meal idea. Plain ikan bakar, budu with tempoyak and cili padi, and the usual ulam and nasi putih. A simple kelantanese dish but very satisfying.

That neighbor was from Thailand? I'm sure they'll like it. I went to Thailand and stayed about a year and the way they eat ikan bakar just the same like Malaysian. Steamed rice, ikan bakar, Thai style air asam and salad. The different is Thailand air asam for ikan bakar is theirs are more to sour and spicy and Malaysian are sweet and sour.
When you make sambal belacan, just feel free to add green (young) chillies.. no need to put all just red matured one... Green big chilli is less spicy. And you can put more to have more sambal belacan.
Bird chilli / tomyam chilli.. there are many type..
Always choose rounded bottom one..its also less spicy..
The sharp bottom is too spicy.
Why not you try growing chilli plant? Salad? Wings bean plant ..yourself.
You can just take chilli seed from red chilli to grow the plant..
That can be another content for your videos right?
