    unspoken rule for malay: if they give you tapau, then you must return the container when you visit their house again. But make sure the container have another dish that you prepared before returning. It's not compulsary to give another food, but it is considered a good culture because you can exchange food and appriciate each other food and tighten the bond by visiting each other again.

We should watch that part (exasperating and hilarious) and honestly that is what I truly felt when I was young and even now and when I was staying in China, I find the endless returning culture is getting very tiring .. as far as it is to me. But no
      offense. My kids’ generation do not practice this anymore, only a sincere thank you and a big dose of gratefulness. So I think the previous culture of returning a container with some spoonful of sugar in return is a nice alternative. 🥰

    All Malaysians will have comments on food. Some say too salty, some say not enough salt. Some say too spicy, some say not enough spicy. You can take all comments into consideration, but in the end just cook the way you like it 👍👍👍

    Different Malaysians have their preferences with sambal. Some like spicy, some like sweet, I like combination of salty and sweet.. Some like watery sambal, I like it less watery.. So iChang, just cook the way you like.. As long you and jimmy enjoy the food.😉

    It's okay IChang, they give you some criticism so that they can taste your food again and they treat u like family lor. You are really good on wrapping nasi lemak with banana leaf. We Malaysia sometimes use plastic wrap to get ala kadar vibe. Hahaha. Good job IChang and Jimmy.

    They all can say anything about nasi lemak but hand of cook up to them we must respect ichang can cook Malaysian HALAL food for friends with there best not all person like spice or slate in food ,not all person have same taste of food me also as chefhelper i know the taste of nasi lemak and different taste in other stalls or shop of nasi lemak , we Malaysian support ichang with Good to success in cook and i from Penang wish you be great chef

    Personally, i will never complaint at guest house. For me, complaint much is rude. If they/owner ask an opinion is okay no problem for improvement.
    Other than that, taste is very subjective. Some prefer more salt. Some prefer more sweet. Bla bla bla. As long its moderate its good enough to balance out.

    I find Sambal Tumis a very special dish in every Malaysians heart. Whether it is too salty or too sweet or not spicy enough or whatever, it is still Sambal Tumis. The challenge is to make Sambal Tumis that everybody loves. It took me 20 years to make a Sambal Tumis that I am truly satisfied with. I am not kidding. Friends always say that Sambal Tumis is a common dish that many people should be able to make. Not to me. Sambal Tumis is so common that it has reached a level where it has become so special. It is like a household product that you can't live without. It has to taste perfect.

    05:00 yep that is the typical reaction of malaysian living in oversea when we found nasi lemak, especially the traditional banana leaf-wrapped nasi lemak. I lived oversea for quite sometimes, and once i nearly cried when i ate malaysian food. So drama lol. Anyway, good job to you both in cooking the nasi lemak & ayam goreng. There are many different recipe to the sambal, and everyone have different taste. You guys did great! Cheers!

      Also I started to like nasi lemak with a stronger hint of ginger though this is rare in most cases. I happened to tapau one with the strong hint of ginger from this Malay stall each time otw after sending my kid to school and it surprised me first time.. very fragrant and nice.

    I am so happy to see Malaysians of all races mix here in a foreign country (HK) , well almost all - we have Malay Malaysians and Chinese Malaysians here, would have been complete if we have Indian Malaysians and Sabah-Sarawak natives too. I lived overseas many years, each time I met a Chinese Malaysian and Indian Malaysia or Sabah-Sarawak native, I never looked at them as Chinese or Indians or East Malaysians but as Malaysians, and they too at me. We helped out each other a lot despite at home it looks as if we always have racial tensions but once overseas in a foreign land, we stick together as Malaysians. I am Malay ethnically..

      The overseas experience definitely has a liberating effect on those affected by the British spectre of divide and rule--based on a racial categorization the British Empire imported to Malaysia. Unfortunately, many old-time political parties (especially ones who have always been a part of the post-colonial Malaysia even during British handover) continue to utilize this colonial inheritance when it favors them. My folks carry psychic wounds and trauma from the Race Riots of 1969, as do many Malaysians who have settled and made a life overseas. I have the privilege of being American with Chinese and Malaysian roots, family in Malaysia, US, Australia, and Hong Kong. When in Malaysia, certain conversations always gravitate towards me because of my diverse identity. Sometimes conversations (whether with Chinese Malaysian or mixed race Malays in peninsula Malaysia, Iban and Dayak in Sarawak) turn into grievances that Malaysian society does not welcome. I usually just listen and just witness them. When I travel, I don't like to meddle with the local politics like some deluded "white savior." It must be therapeutic to speak to a stranger who you will never see again. Much love to Malaysia. Sadly, the psychic wounds she carries continue to fester and rot.

      Indeed..I've experienced once in my life when I had a 1-month training course in Japan last year. Buka puasa ramai2, raya pun sama2 at Kyoto Uni. Then, during my training at Hokkaido Uni, this one Sarawakian girl, PhD student at that uni approached me as been asked by her sensei to be a translator for him in case I couldn't converse well in English. But ended up, she didn't need to translate as I could speak decent English. lol. After the meeting session, we left sensei's office and go lepak2 sembang2 kedai kopi. Then, she invited me to a dinner party at a Japanese restaurant with a few other Malaysians. At there, I met Malays, Indians, Chinese, Sabahan and Sarawakian sitting together on the tatami floor while eating and trying scrumptious Japanese dishes. Baru kenal tapi riuh mcm dah kenal lama. Indeed, there is an unspoken bond that unites Malaysians even when we're in a foreign land. Dear miss Alice, if you are reading this, just want to say Arigatou gozaimasu for the memories in June 2019 and terima kasih belanja Ais Krim tersedap di Hokudai :)

      @@yusofafif I was in Japan twice, both times there added up to a year. First time in Tokyo (3 months) + Ube in Yamaguchi-ken (6 months). Later on I went again, this time just 3 months in Tokyo based at University of Tokyo. Both times for short courses sponsored by JICA. I was a lecturer at a local IPTA, retired now (I am very old now! Haha!). Yes, I too met Malaysians of all races there, we all close to each other. But I spent most of my overseas years in US, through 3 degrees, a total of 12 years. I had a son born there, he got married last year, had his baby this year who is my first grandchild. Yes, I met lot of Malaysian in US of all races from all states of Malaysia, e pretty close to each other..

      The same Oversea Malaysian, when they are walking on the street is not the same when you meet them at party, they automatically don't talk about race, religion and politics.... most of them will be just so happy to talk about food , how to get this ingredients ,that ingredients lah than makan and makan, than a bit about the country they are staying,than more story about missing same food in Malaysia.....hehehe.... Me too had gone through this for 20 years in several countries.

    Nasi lemak bungkus (wrapped nasi lemak) is just hit different. The fragrance from banana leaf that infused into the steaming hot rice oh my god 😍😍😍😍 i have one fav stall for nasi lemak bungkus. One day, suddenly they change to buffet style instead of bungkus i literally cried its so sad i love nasi lemak bungkus so much

    Every malaysian will give a different view of what they feel needs tweeking in a nasi lemak however tips will always heighten your skill further. Judging from the first initial reaction, your nasi lemak is pretty awesome. I personally love a more gingery taste

    Great video! The lady with glasses, that commented on the food, must be a cook. She reminded me of my late mother. My mum loved cooking and she always had something to say about other people's cooking 😁. Having said that, everyone has different taste. Some like it spicy, salty, sweet etc. I think you have done a marvellous job. You should be proud of yourself.

      The lady with glasses was asked to give honest opinion about certain dishes. She didn’t give voluntarily. To help others to improve better is to give honest opinion - it was exactly what most chefs want to hear. Giving untrue compliments will NOT help ichang to improve.
      They are all very good friends - that’s why can see they very relaxed talking.
      For me - I appreciate honesty than untrue compliments.
      Anyway, it’s individual preference.

    Orang dah masak tak elok comment banyak2. Rasa sambal pon ko nak complaint smpai ckp kena lebih belacan la, terlebih halia la. Sambal nasi lemak bnyak variasi akak2 oiii. Mak aku masak smbal nasi lemak tak pakai gula atau belacan pon sedap giler. Yang penting smbal tu dibuat guna cili kering dgn blend sendiri. Tak sempurna rasa sambal kalo pakai cili boh yg dari kedai. Pape pon the best la ichang. Keep it up guys

    As a Malaysian home cooking enthusiast, I love it when people give their honest opinion especially from fellow cooks. This is where you pick up valuable tips because I think most Malaysian cooks do not follow a specific recipe - they cook from experience and taste which also evolves with time. I may not agree with some of it, but it really helps me reflect and do better the next time. So great job! Btw, I love your video editing!
