This is turning into a The Office/Parks and Rec kind of show, but like a culinary version... There's character development, running gags, funny dialogue, witty editing, a lot of comedy in a working environment. I love this so much lol.

and some parchment paper is on top of it lol
The almond is double toasted because the first toast dehydrates and crisps it. But the second toast softens the fibers and releases natural sweetness from those bonds. It makes the almond more brittle, rather than crispy.
Also, carnauba wax was one of the ingredients. It could be that they used the wax to prevent the fat bloom in the chocolate. A very thin misting of it over the coconut would likely suffice and under a surface coating of chocolate and contrasted against the color of coconut, it would be nearly imperceptible.

Yeah, Claire is killing it with this series; fun to watch her overcome failure and expertly use the particular talents of the people around her. I've also become a big fan of Chris. Delany is also cool, wish hey did more Alex eats all, but without the time limit; can't be good for the man's health to gorge like that! And you would think the time limit also impacts the competition: the slice of pizza he has first on an empty stomach would seem to have an advantage over the 23rd slice in 36 hours.
It truly is a “joy” ... lol
Why doesn't Claire just make a video about learning how to temper chocolate with a chocolatier? 😂😂 Would solve a lot of future problems.

I only did my certificate 3 in pastry. It's pretty bloody easy to temper chocolate.
They have it every season of The Great British Bake Off. Everybody manages it. In season 3 the tent was hotter than tempered chocolate should be and they managed it.
Besides, it's her arch-enemy.

The chocolate is tempered but before enrobing, you needed to take the chocolate out of the bag and into a bowl and mix throughly so the fats and cocoa solids can be well combined because without mixing, the solids sink and the fats rise hence the streaking. Agitating the bag is not enough.
