Being lactose intolerant I appreciate the lack of cream in this classic recipe. Dry aged cheeses I can usually handle since they have fewer lactose
I believe you can also eat Buffalo mozzarella. It is lactose free and delicious

@@jinkaza1 I looked it up again and apparently buffalo mozzarella only contains a small amount of lactose that is tolerable by lactose intolerant people too. Plus it's delicious and better than cow milk mozzarella in my opinion.

A kitchen fit for a queen! What a set up! that stove with the brass rail, the fire place, the cutlery (did you see that knife), the pots and pans and of course the espresso machine, lets not forget the cutting board. Even the wood spoons are as hot as the past queen!
and by the way I make my Carbonara exactly the same way, perfect carbonara is all in the technique it is so important to take some of the guanciale renderings and stir them into the yoke cheese mixture. one thing I have just started doing when cooking pasta is, I am using less water to boil the pasta in order to increase the starch content of the pasta water for finishing sauces. when stirring it in the sauces become richer and more glistening, simply gorgeous............ just like you.......

My stepdad is Italian, he lived with my mom in Rome for 20 years and my mom always made sure there was italian home cooked meal for both my nephew and stepdad (and the whole family)

I’m Italian but was never close to my Italian relatives, my great grandmother came to the states while pregnant with my grandma and I was never close to that grandma and I wish I could have Italian family recipes passed down to me! So now I try my luck at my own while trying to learn from other Italians, so thank you!

Mine has chopped sausage added and sprinkled with chopped Italian parsley served on the side with toasted polenta sauce with picante provolone or mozzarella! Yummy
I love carbonara. A bit salty but it's tasty overall. I found guanciale in an Italian shop (don't try the regular grocery, that never works). I just got some pecorino, so I am definitely making this. I have spaghettoni, spaghetti quadratti, fettuccine, and penne rigate, so many choices to try.
