- Deep fried mashed potato balls from 1822 and a slow roasted duck from 1823. These are real recipes (or receipts as they used to be called) from those who came before us. Let's recreate these dishes as they were made 200 years ago!

Yup. Old Farmers Almanac and Yankee Magazine are full of them. We still eat many recipes from 200 years ago

I grew up in a Hungarian household and my grandma made a similar version of the 200 year old receipt for fried mashed potato balls using leftover mashed potatoes. Her version was "potato cakes". Instead of breading the outside, everything was mixed together and fried in a skillet. She mostly just used onion, salt & pepper and parsley for her version as far as seasoning, omitting the rosemary, thyme and nutmeg. And of course we had duck or goose depending on what my great-uncle was able to successfully hunt.
Forgive me for asking but do you have any running water nearby-I guess what I’m asking is how do you wash your hands? Between the raw meat and eggs and just the mess of mixing butter with your hands or the potatoes, I keep wondering!

Nutmeg in savory cooking is fantastic! It is an unlikely combo in modern cooking but in classic French it’s used in sauces, especially cheese sauces because it brings out the flavor. Much like adding salt to baked goods!

@@solitaire5856 Because back in August of 2022, me and my little brother Seth were watching The Wiggles Racing To The Rainbow. We saw Murray and Captain Feathersword singing Five Little Ducks together. Right after the song, there was a duck swimming in the water, looking very peaceful and beautiful while the instrumental version of Five Little Ducks was playing in the background. It broke my heart to realize that ducks, just like that one, were being hunted, shot, killed, plucked, and made into food.
My late Grandma made the most delicious roast duck with raisin apple stuffing! This meal is making me drool!!

Justine, what's that little lard pot called? And would you let the lard cool down, put back in a cold place, and use again and again?
It's a cauldron ^_^ there are many sizes of cauldrons some are big some are small like ours. Yes you can reuse the lard over and over in fact that is what people back then certainly would have done. Lard was an important item and was used in soaps, hair pomades and in lotions too. New evidence is coming out saying that lard is healthier than butter and some vegetable oils.

Seems many of these old dishes from the mid 19th, 18th, and 17th centuries went way overboard with nutmeg. It's kind of nice to taste what you've prepared and not just taste nutmeg... Yuck!

I love you’re videos there so relaxing I love watching them on a cold night it’s so cozy but i do have a question tho when you’re not filming do you still live and dress like u do In the videos or are u more modern such as like going to the bar or watching tv and wearing more modern clothes etc? At the end of the song, there was a duck swimming in the water. The duck looked so peaceful and beautiful, but my heart was completely broken when I realized that ducks just like that one were being killed and made into food and other things.

I LOVE duck! I love it roasted while over chopped potatoes, onions, whole cloves of garlic and herbs. The duck drippings crisp the potatoes underneath as the duck roasts (also stale bread cubes instead of potatoes is nice nice as well.
I found part of a stove and spoons when I metal detect in the Berkshire's mountains two months ago and colonial people did use them and ate things out of bowls.

Yes, it was upside down. Duck is has a lot of fat. If it's upside down it makes the breast not as dry & much of the fat runs into the pan. I cook my turkey this way too. The breast is not as dry baked that way.

I just discovered this channel and I totally love it! I love early American history, and I love food. Also, the only thing better than eating good food is seeing someone truly enjoy their food.
