hi, di ko po alam ang secret sa mga branded brazo de mercedes kung pano nila mamaintain ang shape at texture since factory processed npo ang mga ganun & maybe may stabilizers sila na ginagamit. One factor nagdedeflate po sya sa sudden change of temperature , to help na di mag weep out or mag liquify ang sugar, you can cover it with wax paper, then store in a cake box or container with lid then store in a cool dry place. Another hack po (just like sa donuts), is to add cornstarch to the sugar para maprolong ung dryness ng sugar.
170C or 338F for 20-30 minutes. If your oven is bottom heat only use the setting I just mentioned but if you have a dual oven(bottom and top heat) make the time lesser as long as it gets brown enough like in the video

Do you roll it right away after taking it out from the oven
let it cool down to room temp.
