- Brazo de Mercedes is definitely one of the Filipino favorite desserts. It's like leche flan and yema which I myself couldn't really resist and eat as much as I can see them. Probably because of the tasty custard at the center and a feel of heaven in my mouth. With soft and marshmallowy melts in your mouth meringue and a rich creamy custard filling, you will surely enjoy devouring this treat satisfying your sweet desires!
Ingredients
Custard:
10 egg yolks
1 can (390 grams) condensed milk
1 tsp vanilla
Meringue:
10 egg whites
1/2 tsp cream of tartar
1/2 cup sugar
Powdered sugar for dusting.
COSTING:
10 eggs x 6 = 60php
1 condensed = 32php
1/2 cup sugar = 8php
TOTAL = 100php

Hi Mortar and Pastry! I just want to say thank you 🤍 dahil sa mga videos niyo natuto ako mag bake/luto ng mga pagkain na gusto ko at kini crave ko. Noong pandemic, lagi kong tinatry lahat ng recipes niyo. Nakapag benta din ako extra income noon. Ngayon dala dala ko pa din ung mga natutunan kong recipe dito sa channel niyo. For those who were asking about the deflated meringue, I used a smaller but deeper baking pan. It worked well :) It deflates but still leaves a big, fluffy meringue underneath. For the custard, I double-boiled it before cooking it in direct heat to make it smoother than just cooking it in direct heat/fire.

i just baked this last night. The taste is good and very soft. I've followed your instructions, but i added 10 more minutes in baking because the meringue is still uncooked, maybe depends on the oven.
I just forgot to comb the meringue.
And when i remove the parchment paper, it sticks.
But over all, my ist try is delicious.

Hello! Thank you for sharing your experience. You're right, baking time may really vary depending on your oven. If it sticks too much, it might need a bit more time in the oven. It may also stick because of the quality of the parchment. Some parchment papers available even cookies does sticks to it. Glad you still enjoyed! :)

@@21ryro30 yes, i timed it 20 minutes. Although you need to be careful in choosing the pan necessary for the amount of batter you make. You need the barter to fill the pan fully and should be thick. Otherwise it's gonna come thin and flat. I recommend you use large eggs or XL ones.
Have you tried baking it in toaster oven?
I will also do it in half and divide into 4 since the oven is very small, gove for 2 pcs burger inside.

Hi! Ang production cost for this recipe is 100 pesos. Pwede mo siyang ibenta ng 200-250php including the overhead and packaging. Depende padin sa magiging total cost sa ingredients na gagamitin mo :)

Hi! Salamat po dito. Ilang minutes nyo po binake at ano kaya temp?
Ano po gamit nyong oven? yung sakin po kasi baumann, lagi po ako nagaadjust ng temp kasi po kada try ko ng recipe laging nasusunog. sinet ko lang po sa 140C in 20 minutes pero parang di po maganda ang pagkakabake
can i use foil instead of parchment? hindi kaya didikit if i put butter?

Grease the paper once placed in the tray i guess
