Without ever having seen bamboo flour, based on what I’m reading online, it’s similar in absorbency to coconut flour. Let me tell you how I modify almond flour recipes with coconut flour. I use 1/3 the amount of coconut flour for almond flour. So for every cup of almond flour, I substitute with 1/3 a cup of coconut flour. Highly absorbent coconut flour requires two times the moisture of almond flour. When modifying a recipe I doubled the amount of eggs , and I doubled the amount of water. I let the dough/batter sit for 10 minutes to absorb the moisture. I make this same pizza crust using only coconut flour and they’re much stickier requiring me to freeze them before peeling off the top parchment paper. Bamboo flour may make a sticker dough also. I’m just now playing around making brownies and breads with only coconut flour and for those I’m having to add in more fat in the form of coconut milk and or ghee. Since bamboo flour appears much lower in fat content, you might have to add in some type of fat. That’s where I would start with bamboo flour. I honestly didn’t even know it was a thing so thanks for putting it on my radar.
