I usually fry the tofu and than remove some of the access oil with a kitchen towel. But "dehydrating" them without oil in a non stick pan also works fine.

Lol your vids have gotten me interested in experimenting with vegan recipes) Also, I just wanted to give you a heads up on the fact that Thai curries are traditionally made with Kapi/fermented shrimp paste. And Kapi is usually present in premade curry pastes as well. Great video btw! Love your cooking vids.
Haha I use the same trick to make the rice look fancy. And I looooooove Thai curry too (agree that the eggplant is essential) but I think big pieces of potatoes upgrade the dish too 😋 greetings from a fellow vegan in the Netherlands!❤️

If you do not want to burn the red curry paste pour the coconut milk right after putting in the paste rather than frying the paste by itself. Also for more flavour put in garlic and thai chilli :)

What's the difference between these curries because today I was looking at the ingredients on Cock brand's curries and all of them (Red, green, massaman, padang) have the same ingredients? The only difference I've noticed was the percentage of chili!
The coconut oil shouldn't be a problem, you can just replace it with any other vegetable oil and i guess you could also use milk substitutes like almond or soy milk instead of coconut milk but that really depends on your taste. You could even try using vegetable broth to create a sauce!
I think you can obtain the same creaminess if you use almond or soy creamer but ofcourse it won't taste coconuty like Thai curry. But I'm sure it will still be delicious ☺
I know for a fact that the shown red & green curry pastes are not vegan, only the yellow one (that you don't like ;)), because they contain shrimp paste...... How come you used olive oil for frying the veggies and not coconut oil?
