    I never add water to my chicken Stew. I learn that from my grandfather. I do add wine. But never water. Just cover the pot & allow the chicken to release it’s own juices there’s no water needed. The taste is amazing!! ❤️❤️🇵🇷🇵🇷

    I grew up in California. My memory of this dish is from my childhood. I’m half Cuban and have been stationed in Puerto Rico as well.
    I thought this dish was called Fricase de pollo, cooked with carrots and potatoes, then served over white rice,. I remember the dish called Arroz con Pollo, when the rice and chicken is cooked together, with spices added to give it a deep Orange or yellow color. What’s the difference between Pollo guisado and fricassee de pollo?

    Puertoricans do use Cumin it's within the Ingredients to Goya Adobo. I like fresh Cumin Seeds. I don't use Adobo. I want everything fresh. no Garlic Powder or Onion Powder. Todo Fresh.

    Very similar to mine except I do not add so much water. I only add the wine and maybe 1/4 cup of water and then the chicken will release its own juices. The flavor is too die for.

      I put a can of beer in mine and I add more stuff to my sofrito peppers, ajicitos dulce ( little sweet peppers) not available everywhere. It is so delicious. This looks great I love to taste others cooking sometimes I tire or my own.

      So its similar but you want to cook the beef before anything else. So you would cubed beef in beef stock or water whatever you have an boil the pieces of meat for about an hour till the pieces are tender then add in sazon, salt, garlic etc all seasoning then add in your veggies and cook for another hour on low/med heat this is after you brought all ingredients to a boil. The idea is you give stew time to cook and simmer so you wanna prep meal 2 to 3 hours before dinner. Hope that helps

      That's soup not stew. It will run through the rice & rest on the plate your right it should be thicker almost like gravy.

    The over mixing the rice is bothering me. Everything else looks good but over mixing rice recipe for gummy rice, which is not very tasty. I know we all cook different so,.one.rule of mine is do not mix the rice. Add water, cover and leave it alone

      Yes...it is sticking to the spoon...once its dry..you cover it..lower the flame and leave alone for 20-25 minutes..stir once bottom to top, cover it and let it cook and 10-15 minutes...your rice shouldnt be sticking to your spoon like that..

    There is a reason why she only did two videos. When you use so much tomato sauce, you're just making it too acidic. You don't need two sazón envelopes. The white rice you can see as it sticks to the spoon that it comes out as we say "amogoyao". Always clean your rice. Especially if it's Goya. Cooking white rice takes no more then 25 minutes. Never cover your rice wet. When the water evaporates, then you cover it and lower the heat. Never use cumin. Unless your Cuban. Puerto Rican's do not use it.

      Why would you cover rice after water has evaporated? What's the point in covering if there is no liquid to generate the steam?

      Abbie Cruz that's exactly how I do my rice, I cover after water gets low, you only need an inch of water for steaming" I don't wash it because I tried that and it came out mushy, I like to leave the nutrition in it♡

      Abbie Cruz I have problems with your comments number one and foremost. Cumin is used by all the Caribbean, Cubans just use t more and it’s a staple seasonings. I use it and it adds amazing flavor. At the final result, the rice did not look amogoyao. When you’re stirring rice it tends to stick to the spoon when it’s cooking. I did find her method of cooking the chicken very odd but once again there’s no ultimate way to make it. How about your ass uploads a video and you can teach us all.

      Abbie Cruz I cover it when it’s wet especially if I use long grain rice , but that’s my way , and it comes out perfect ( rice opens up and everything) and I use adobo with cumin sometimes and my grandma uses it as well and she’s as Puerto Rican as they come lol I do agree with u about the tomato sauce . And her yellow rice recipe is a no no for me. Her way of making chicken is really off because I cook the chicken first with the sofrito , that’s why it’s called sofrito because u fry it with the meats and then I add everything else . I also add more wine lol 😂

    thats not a "guisado" mama its supposed to be thick... and not runny like soup/sopa plus the chicken gives up a lot of water on its own... all authentic guisados are thick like a gravy almost ... you put way too much water... might as well call it soup without the fideos... no disrespect nena... similar to this video... ua-cam.com/video/TOTB3su6rm8/v-deo.html

    Thos is the nasty version of authentic Puerto Rican chicken stew..arroz guizado and white rice its not that complicated dont stir it so much after it dries cover and forget ti.
