Surprisingly, I don't think there is an ideal fiber or yarn. Every fiber has it's own unique qualities (breathability, insulation, strength, shine, elasticity, durability, washability, environmental impact, etc.). So, it kind of depends on what fabric characteristics you want to achieve for a project, as well as what you like to work with.
This is one of my favorite stitch patterns as well! I've never tried doing this kind of cast on.
