Hi Janet. I discovered your channel yesterday. I’ve been baking keto for a year now with other great UA-cam keto bakers but you are by far my favourite instructor. Hello, my name is Cheryl. I love your recipes. I have high blood pressure and Diabetes. I am always looking for a recipe I can eat. Thank you for your time today.
Not so much with coconut flour. Coconut flour is already thick and absorbent so if you firm the dough in the refrigerator the dough may dry out too much
@@JanetsDeliciousLowCarbKitchen I made them, added a walnut half and some sliced sour dried cherries - so far the best recipe...but I think keto recipes have to be followed properly otherwise they don't turn out great...but these cookies are delicious .xxxx thanks again Janet!
@@desleykakoulidisgallaway3382 Yes it is very crucial to follow keto recipes very closely especially when using coconut flour. I am so glad these turned out for you.

I don't usually store coconut flour dough to use later because it is so absorbent. It has a tendency to absorb the moisture and be dry and crumbly when you try to use it. This is my favorite coconut flour bread recipe janetsdeliciouslowcarbkitchen.com/simple-keto-coconut-flour-quick-bread/?amp=1
In this recipe you can leave the baking powder out. The texture may be slightly less puffy but since this is gluten free it shouldn't effect it too much.
@@JanetsDeliciousLowCarbKitchen especially when they're actually benefiting from it rather than simple mindless entertainment; not that mindless entertainment is necessarily bad, but it's certainly not as beneficial and educational as content like yours ;)
Peanut butter would not work very well in this recipe because it would effect the liquid to dry ingredient ratio and that is very important when using coconut flour. I do have some keto peanut butter cookie recipes that you can check out. Using oil instead of butter should work just fine. The best oil as a butter substitute is coconut oil however any neutral flavored oil should work. Olive oil is not a good choice because it does not have a neutral flavor and you will be able to taste the oil.
That's a little tricky. Coconut flour is VERY absorbent and eggs are about the only component that can handle the texture of coconut flour. The eggs also create texture and bind the ingredients together. However since this recipe only contains 2 eggs you might be able to get away with using flax eggs. To make a flax egg place 1 TBS of ground flax seeds in 2 1/2 TBS of water. Stir it slightly and allow it to sit for about 5 minutes. It will get thick and be a texture that is similar to an egg yolk. This is equivalent to 1 egg. This recipe calls for 2 eggs so you will have to double this. If you do this you may want to add 1/2 tsp more of baking powder and about 1 TBS of apple cider vinegar to make the dough not so heavy. I can't promise that you will get the same results but it's worth a try. Hope this helps. :)
@@JanetsDeliciousLowCarbKitchen you sure are so courteous, I wasn't expecting the answer with such detail.. Am little reluctant to use flaxseed bcz my intestines are weak to digest tough food, am diabetic too, its good for me though but... Anyway, I would try both.. Yes you can use regular brown sugar and you can adjust the sugar to your taste. However be careful not to reduce the sugar too much the dough will begin to lack bulk and you will end up with a mess
That's great! I hope it turns out great for you. Check out my coconut flour playlist on my channel page if you still need ways to use up your coconut flour ;)
@@AJ-ku9jz yes you can do that. If you choose to add the gluten flour I would suggest using the coconut almond flour version and substitute the almond flour with gluten flour.
Don’t know what I did wrong… dont know how to cook, so it’s harder for me… they came out too greasy and soft although I added the extra 1/4 cup of coconut flour… they taste good… any advice for me? (I think the flour iz too “thin”, so maybe for next time I should add more coconut flour and less butter???)
My first question would be did you allow the dough to sit for the full 15 minutes. The other issue may be the texture of coconut flour can vary from brand to brand so it's always good to test the dough before baking. If you're not sure about the texture bake 1 cookie and see how it turns out
@@JanetsDeliciousLowCarbKitchen the dough seemed ok: it wasn’t hard enough So I added 1/4 cup and waited… and it seemed ok… but after baking and waiting, cookies were just greasy and soft…I’ll keep trying. They’re SOO GOOD even though they turned out like that… so trying will be something I NEED!!!
You may be able to substitute peanut butter. My concerns would be the effect it would have on sweetness, salt and texture. The fat from the butter really helps tp keep these cookies moist.
Yes I have several different bread type recipes using coconut flour. On my channel page in the playlist section there is a playlist for bread and pasta. It has several bread and bun recipes.
Yes I have baked with gluten many times and it is great for keeping baked goods together. Unfortunately a lot of people who are subscribed to my channel are gluten intolerant so I stay away from gluten on the channel
Yes they are supposed to be a little soft but not soggy. When they first come out they will be very soft but they should be firm after cooling on the pan
@@JanetsDeliciousLowCarbKitchen i see , kinda disappointed that the texture arent hard enough so the crunchiness is missing. I tried baking some very thinly spread with the leftover dough but still the same result.
Ingredients 3/4 cup coconut flour 1 cup monkfruit sweetener or granulated sweetener of choice 2 tsp baking powder 2 large eggs, room temperature 3/4 cup butter, softened 2 tsp vanilla extract 1/2 cup chocolate chips or add ins of choice, optional
From what I calculate 1 cookie made with only coconut flour has 72.5 calories and 1 gram of net carbs. The cookies made with almond and coconut flour have about 64.8 calories and 0.6 grams of net carbs
I wouldn't advise using honey. Coconut flour is very sensitive to the amount of liquid that is used. I like to use granulated monkfruit sweetener. If you choose to use honey you would need to cut down on the liquid a little
Yes a half cup of sweetener would work just fine. This recipe is very adaptable you can adjust the sweetness according to your taste without having to adjust anything else
Thank you… not only did I think about it but after tasting them, I thought it was too much sugar… of course, this is MY taste…but it’s good I don’t have to add anything else!… Thanks again!
I have tons of coconut flour as during the lockdown, when here in Italy people could go out only with a good reason like buying food, I would go to the store buying a package of coconut flour 😁 Anyway, I have a question: I can't find monkfruit... I looked for it even on Amazon but... Nothing. I use erithritol but I don't like it because, when cooked, the flavor is bitter and disgusting.... Any suggestion? Thanks
The two sweeteners I use are the Lakanto monkfruit sweetener and the Besti monkfruit/allulose blend. I do have links in the description to where you can buy them. I believe in Italy you can buy the monkfruit sweetener at ubuy,co,it. I'm not sure if the monkfruit/allulose blend is available in Italy
@@robyroby1902 I don't use erythritol by itself because it does have an after taste I use the Lakanto monkfruit erythritol blend and it has a very nice smooth flavor
Please stop using cups to measure flour, use grams instead. This what professional bakers do because it gives consistency, measuring cups are too imprecise and when switching to a kitchen scale with metric units your precision will increase tenfold at least. When you have a scale you don't have to measure liquids either (since 100g water/milk = 100ml) so you will save a lot of time and dishes using a scale.

Can I use peanut butter instead of regular butter, if so should I use the same amount?
You may be able to substitute peanut butter. My concerns would be the effect it would have on sweetness, salt and texture. The fat from the butter really helps tp keep these cookies moist.
@@JanetsDeliciousLowCarbKitchen thank you I'm so glad I found your channel
Do you happen to have bread recipes using Coconut Floor.
Yes I have several different bread type recipes using coconut flour. On my channel page in the playlist section there is a playlist for bread and pasta. It has several bread and bun recipes.
Have you ever tried to bake with gluten? I use it for my keto recipes that makes my cakes and cookies not so crumbly.
Yes I have baked with gluten many times and it is great for keeping baked goods together. Unfortunately a lot of people who are subscribed to my channel are gluten intolerant so I stay away from gluten on the channel
Ok.. I just wondered that nobody is using this, just me 😂
How do you do it?
If anyone knows how much gluten to use let me know please!!!
Hi 😋 those cookies 🍪 look 👀 delicious. I don’t have a electrical mixer just the whisk 😖 Can use it ❓
Yes you can! This is a very light batter so it can be whisked by hand no problem :)
@@JanetsDeliciousLowCarbKitchen Thank You 😊
Can you use honey or maple syrup for this?
You can use honey or maple syrup but you would probably have to slightly decrease the amount of liquid in the recipe
@@JanetsDeliciousLowCarbKitchen ok gotcha thanks
Not sure if I m doing it correctly , is the final product texture suppose to be kinda soft after cooling?
Yes they are supposed to be a little soft but not soggy. When they first come out they will be very soft but they should be firm after cooling on the pan
@@JanetsDeliciousLowCarbKitchen i see , kinda disappointed that the texture arent hard enough so the crunchiness is missing. I tried baking some very thinly spread with the leftover dough but still the same result.
Ingredients
3/4 cup coconut flour
1 cup monkfruit sweetener or granulated sweetener of choice
2 tsp baking powder
2 large eggs, room temperature
3/4 cup butter, softened
2 tsp vanilla extract
1/2 cup chocolate chips or add ins of choice, optional
how many calories is this? does anybody know?
From what I calculate 1 cookie made with only coconut flour has 72.5 calories and 1 gram of net carbs. The cookies made with almond and coconut flour have about 64.8 calories and 0.6 grams of net carbs
Would it be possible to freeze these cookies do you think?
Yes these freeze nicely. I just put them in a Ziploc freezer bag for up to 3 months
Can I use honey instead any sugar?
I wouldn't advise using honey. Coconut flour is very sensitive to the amount of liquid that is used. I like to use granulated monkfruit sweetener. If you choose to use honey you would need to cut down on the liquid a little
How much of coconut oil can I use to replace the butter?
You can use coconut oil as a 1 to 1 replacement for butter in most recipes
Don’t melt your butter, just soft butter, that way you won’t have a too wet dough.
Can I add ghee instead of butter?
Yes ghee should work just fine
Can we use manual mixer if we don't have kitchenaid mixer thx for u
Definitely I have issues with my shoulders so I almost always use a Kitchen Aide but this can easily be done with a hand mixer or wooden spoon :)
I loved your channel n u just earned another subscriber 🌹
Thank you so much and welcome to our UA-cam family :)
I’m now number 993 congratulations I’ll make your cookies tomorrow
That's great I hope they turn out perfect and thanks for subscribing
Hi, is it okay to use half a cup of sweetener instead, would l need more almond/coconut flour to compensate?
Yes a half cup of sweetener would work just fine. This recipe is very adaptable you can adjust the sweetness according to your taste without having to adjust anything else
@@JanetsDeliciousLowCarbKitchen thankyou, I'm going to make them today.😁
Thank you… not only did I think about it but after tasting them, I thought it was too much sugar… of course, this is MY taste…but it’s good I don’t have to add anything else!… Thanks again!
Thank you
You're welcome :)
I have tons of coconut flour as during the lockdown, when here in Italy people could go out only with a good reason like buying food, I would go to the store buying a package of coconut flour 😁
Anyway, I have a question: I can't find monkfruit...
@@JanetsDeliciousLowCarbKitchen thanks for the answer.
Did it happen to you to find erithritol bitter when cooked?
@@robyroby1902 I don't use erythritol by itself because it does have an after taste I use the Lakanto monkfruit erythritol blend and it has a very nice smooth flavor
You can use a small amount of stevia, I used two tablespoons of stevia in the mix, and it turned out perfect!
@@lnformationIsm thanks 😊 I can find stevia in Italy
Please stop using cups to measure flour, use grams instead. This what professional bakers do because it gives consistency, measuring cups are too imprecise and when switching to a kitchen scale with metric units your precision will increase tenfold at least.
When you have a scale you don't have to measure liquids either (since 100g water/milk = 100ml) so you will save a lot of time and dishes using a scale.
Why not say both!, I don't use grams.... then I'll have to look it up uggh!
Its up to her. Its her recipe her channel.
