Greek Style Meatballs Saganaki: Keftedes Saganaki

    Serves 6:
    For the meatballs:
    1-pound lean ground beef or lamb
    1 medium onion, quartered
    1 whole garlic clove
    ¾ cup bread crumbs, unseasoned
    ½ cup whole milk
    1 large egg
    ¼ cup grated parmesan cheese
    ¼ cup chopped parsley, or more
    1 teaspoon dried crushed oregano
    1 teaspoon salt
    ¼ teaspoon black pepper, or to taste
    Pinch crushed red pepper flakes
    Oil for frying
    For the sauce:
    ¼ cup olive oil
    1 small onion, finely chopped
    3 garlic cloves
    14.5 ounces canned tomatoes, pureed (double this if more sauce is desired)
    1 cup water
    1 teaspoon dried crushed oregano
    ½ teaspoon sugar
    Pinch of crushed red pepper flakes
    1 cup feta cheese, cubed or crumbled
    Salt and freshly ground pepper, to taste
    Optional garnish: finely sliced scallions, finely chopped parsley, or rosemary
    ​Serve with my Rosemary Bread
    Begin by making the meatballs.
    Place the garlic in the food processor and pulse until minced. Add the onion and pulse until very finely chopped.
    Add the parsley and pulse until finely chopped and combined with the onion and garlic.
    Whisk the milk and egg together.
    Combine the ground beef, onion, garlic, bread crumbs, parmesan and all of the ingredients in a large mixing bowl.
    Mix well with your clean hands until combined.
    Cover the mixture with plastic wrap and refrigerate for at least one hour up to overnight if you can. This allows all of the flavors to really come together. I have made these in a hurry without refrigerating the mixture and it comes out very good.
    Form the meatballs into round golf ball sized pieces.
    Heat oil in a frying pan. I like to use a cast iron pan since it retains heat very well.
    Fry the meatballs in batches of about 8 meatballs each time. They take 6-10 minutes to cook depending on their size. As soon as they turn a dark golden brown, remove them from the oil with a slotted spoon and allow them to drain on a plate covered with paper towels.
    To prepare the sauce, combine the garlic, onion, and oil in a sauce pan or pot and cook over medium low heat about 15 minutes or until soft and golden. Crush the garlic with a wooden spoon.
    Add the canned tomatoes, salt, pepper, sugar, water, and oregano. Bring to a boil and reduce to medium low. Cook until thick and reduced. About 15-20 minutes.
    Add the meatballs and warm through.
    Crumble the feta on top and place under the broiler for a few minutes until the cheese softens and chars a bit. Keep a close eye on it to prevent the meatballs from burning.
    Garnish with herbs or sliced scallions and serve with rosemary bread and salad or with mashed potatoes, pasta, or rice.
    Notes: This dish is fabulous with lots of sauce. Just add another can of pureed tomatoes and follow the instructions, cooking the sauce (in a pot) until slightly thickened. Taste and adjust the seasoning as needed. If making a larger batch in a pot, you can skip the broiler step and just allow the feta cheese to soften from the heat of the sauce.
    You may cook the meatballs on the barbeque grill or roast in the oven if you don’t want to fry them. To roast them, place the meatballs on a baking tray and bake in the oven at 450 °F, 230 °C for 5-6 minutes on each side or until golden brown. They do not have to cook all the way through since they will continue to cook in the sauce. Just get a nice brown color around them.

    Hi Dimitra. This recipe looks absolutely scrumptious for a main meal. My mom and I are going out tomorrow to a local authentic greek restaurant and I plan on having their delicious Moussaka and Hummus with Pita and a Greek salad. I am so in love with Mediterranean and Greek food. It is my favorite type of food and you cook everything to perfection. Your family is so blessed to have you as their wife and mother. Thank you for showing us how to make another fantastic meal which I will be trying out this fall on my mother. (My dad passed away in February at the age of 87 and I am going to live with my mother at her house in 2 months so I plan on cooking a lot of new dishes for her to enjoy.) We get along so well and are both looking forward to living together, mother and daughter and will be a comfort to each other.

    One of the things I like about u is that occasionally something does not turn out perfectly but still great food (in this video a few meatballs were still good but a little over brown). Most of us occasionally make something not perfect yet still very edible. When u do this it makes me feel not to necessarily strive every time for perfection. U r an honest and AWESOME cook. Really enjoy your recipes and great presentation. U r a lovely person and great cook.

      Mine used one grape but I think most cultures use the carrot, I have, wonderful. Huge pot or small pot of sauce, one grape, that's it, one grape. It disappears in the sauce. But it's only one grape. I can still hear the women in the kitchen, just--a-one-lil'-grape!

      We also add carrot to some sauces in Mexico to cut the acidity. It's a staple of habanero sauces to have a bit of carrot in them. Sometimes even a pinch of cumin as well.

    Our family recently received about 20lbs of frozen ground beef. It is from grass fed and finished cattle so has that sort of odd after taste family says it taste like fish. Very off putting if you are not used to it. Anyway your meatball recipe will be a perfect solution to making the lot of this meat not only eatable but delicious! Thank you for the clear instructions and sharing your joy for cooking.

    I prefer to buy my tin tomatoes whole in the can and crush they with my hands because they use a better quality of fruit if they need to sell them whole. They can use seconds on third grade in crushed and diced tomatoes. It also feels really Chefie to crush them in your hands.

    The celery tip is good, but it does leave a different flavour to the one I think you’d want in this dish. But I do put celery in my gigantes and I love the taste it gives those. The meatballs look really good. I love meatballs of any kind.

      That's what I thought too. I love celery in certain dishes, but it's not the flavor that I look for in tomato sauce. I mean, sugar can be left out it's such a small amount anyway... Thanks and enjoy!

    When I saw the picture of the final product, I was suspicious. There didn't seem to be enough sauce. But watching you build it up from scratch erased all doubt. I should have known better.

    I use carrots also, works great. If I don't want them visible in the final sauce, I finely shred them in the food processor. I once tried another tip, to add baking soda, but that was awful. It doesn't balance the acidity like something sweet, it neutralizes it, and what you're left with is totally tasteless.

    Oh wow... they look AMAZING. I feel like jumping in there & eating them with you.
    I've heard of people making them with pork too, or a mixture of pork & beef or any other type of meat. I don't like pork very much so I almost never cook with it. But my family loves pork.

    Can we use yogurt or cream instead of milk in the recipe? I cannot use milk bea. of a low tolerance issue, but I am ok with other dairy mostly. It looks great by the way.
