- Nepali Vegetarian Thali/Platter consisting of Rice & Quinoa, Red Lentils Dal, Potato Rosti, Spinach Stir Fry and Tomato Chutney 🥰
Rice:
1 cup basmati rice
1 cup thai jasmine rice
1/2 cup mixed quinoa
Wash the rice 2-3 times before adding quinoa. I add quinoa later as they are light and wash off easily 😮💨 They are organic and I have seen people not wash quinoa but I am the washing queen 😂
Transfer your washed rice + quinoa to your rice cooker and rinse again if you like (I like 🤣) or just cook it 😀
Basmati and Quinoa love a lot of water so I add water to Level 3 although I used 2.5cups of grains.
Dal/Red Lentils:
1 cup red lentils (these are local musuro/masoor dal from Nepal 🇳🇵) but you can use regular split red lentils
1 litre hot boiling water
a splash of avocado oil or any cooking oil
1 tsp salt
1/2 tsp turmeric
1 whole tomato - for me to make tomato chutney
tempered with a spoon of gheu/ghee, 2 garlic cloves, 1 dried red chilli and 1/2 tsp cumin
As this is a fast cooking dal you can cook it without a pressure cooker. It will take 30-40mins of low fire boiling. You can add the tomato mid way and it won’t get over cooked like mine 😹😹
On the pressure cooker, cook on low fire for 1-2 whistles. Allow the pressure cooker to rest till the pressure releases and after taking the tomato out, boil the dal for few minutes until desired consistency is reached.
Rosti Potatoes:
2 medium potatoes
1/2 tsp salt
avocado oil or any cooking oil
Squeeze out any excess liquid. Cook on medium heat. Flip when you see the edges browning up.
Spinach:
250g spinach
1 clove garlic
1 dried chilli
1/2 tsp salt
1 tsp atta/wholemeal flour or corn starch or plain flour
Tomato Chutney:
1 raw garlic
2 red chillies
1/2 tsp salt
cooked tomato
5 cherry tomatoes
lemon juice and some lemon rind
