First Time Making Nepalese Tama ko Achar (Bamboo Shoots Achar) and it turned out so 😋🤤
Tama ko Achar (Bamboo Shoots Achar)
The story of picking bamboo shoots as a 8-9 year old happened in the mid 80s 😂. After the government redeveloped the area (and cut down the bamboo shoots grove) we never saw fresh bamboo shoots in Singapore 🇸🇬 again.
We moved back to Nepal 🇳🇵 in the early 2000s but I got married soon afterwards and moved to Hong Kong 🇭🇰 and I hadn’t dared to try making this achar till now.
I had only seen my mom make this as a young girl and I wasn’t sure how to cut or prep it.
Sure, I spoke to my mom many times over the years that bamboo shoots are easily available here and how I should cook it. But it took me a lot of courage to bring it home 😅
That day when I brought this home, my mom had a hospital appointment and I couldn’t even ask her how long the shoots should be boiled 🤣 but 25mins did it fine 👏🏼👏🏼
Ingredients for boiling tama:
* 1 whole bamboo shoot
* ⁠1 tsp salt (in this video I added 2 tsp salt 😓 which made the boiled tama quite salty. This is why I didn’t add any salt later on and only added a little at the end 😅. If you’re making this, cook the tama with 1 tsp salt and add 1 tsp later when you add turmeric)
* ⁠1/2 tsp turmeric
Boil the tama for 25mins on medium flame 🔥 or until cooked. Next time I might pressure cook it 1-2 whistles 😆
Ingredients for tomato gravy:
* cooking oil (I used leftover mustard oil used to fry my fish earlier that day)
* ⁠1/2 tsp fenugreek seeds
* ⁠2 medium onion
* 5-6 cloves of garlic, a small piece of ginger (I like to use more garlic than ginger)
* ⁠1/2 tsp turmeric
* 2 medium tomatoes
* 5-6 red chillies⁠
* 3/4 tsp Kashmiri chilli powder (mostly for colour but it does have some amount of spiciness)
* ⁠3 spoons grounded seeds
* ⁠juice of half a lemon
* fresh coriander and spring for garnishing
Ingredients for grounded seeds:
* whole pumpkin seeds
* ⁠hulled pumpkin seeds
* ⁠perilla seeds
You can do variations with other seeds such as sesame seeds, flaxseeds.
Allow the achar to cool down for 10-15mins before mixing in the grounded seeds and lemon juice. Doing so will prevent the achar from going bad easily.
I gave half of the achar to my friend’s family and the other half which we kept in the fridge, we enjoyed it for a week 😂.
Back in those days when we had leftover achar, one of the ways we finished it was by adding to instant soup noodles (we used to have Myojo brand’s) and it tasted so good.
Alas, Myojo brand is not available in Hong Kong 🇭🇰 and I tried it with Korean instant noodles and it was just as yum 😋

      Oh, I just found out that I haven’t made a dal with okras recipe video yet 😅 but okras go so well with black lentils 😍😍 you can just add it together with the dal and pressure cook and temper with your favourite ingredients 😋😋 ps: the reason okras become slimy is because of over stirring 😅 and also they need to be dry before you cook.

    My husband was a tea lover. I switch between tea and coffee depending on my mood. I haven’t made tea for quite a while but if I do, this is how I like to make it. Ingredients: * 2 cups water (600ml) * 1 cup full fat milk (300ml) * 1.5 tsp black tea (I don’t measure when I am making so that’s why you see me adding more of the teas later in the video) * 1 tsp green tea leaves * a small stick of cinnamon * 1/4 tsp black pepper * 3 spoons brown sugar * 1 spoon jaggery I bought the ceramic kettle you see in this video from Bhaktapur, Nepal during my solo trip in November 2022, a month before his passing. I haven’t used the kettle since his passing and it was collecting dust on the shelf. I thought the kettle would add some aesthetics to my video but l was surprised to find my emerald ring which I had lost days before my husband’s passing inside the kettle!! There I was rinsing the dusty kettle and I hear something rattling inside 🥹 you know what a #delulu I am so yes, I thought this is him wanting me to include him in this tea reel 🥹 and nope not the first time I have found things I have lost in weird ways that can only make me think it’s him finding them for me/us. And believe me when I say he helps me choose songs for my reels intuitively 😝

    Throwback to 3 weeks ago when I found this beautiful purple cauliflower at the wet market so I was inspired to make this colourful easy stir fry with goji berries and almonds! We LOVED it! Ingredients: * 1 small cauliflower (can be substituted with broccoli) - blanched in hot boiling water with salt till the cauliflower changes colour * a handful of snow peas * a handful of shimeji mushrooms * 5-6 shallots or 1 small onion * 2-3 cloves of garlic * 2 slit fresh chillies * a handful of goji berries * 9-10 pieces of almonds to be soaked in hot boiling water and sliced into 2 or 3 parts * salt for seasoning * extra virgin olive oil for cooking * a small knob of butter (optional)
