I have a CD one of my sisters bought me from back in either Kentucky or Virginia. This group of musicians play the usual instruments, Banjo, Guitar, Fiddle, Bass but, these are accompanied by the Dulcimer/Mountain Dulcimer, the Autoharp and, a set of spoons. Oh my, such sweet mountain music.

Started checking out Kent's cooking videos the other night and my wife says, "why are you watching that cowboy? Turn that off, I'm trying to sleep." Well, yesterday I took out our 12 inch cast iron skillet, removed the sticky buildup that I thought was "good" seasoning and re-seasoned it according to Kent's instructions. Cleaned our oven too while I was at it. Today I marinated some nice pork chops, threw them in the fridge for a few hours and then tossed them in my medium hot, rejuvenated pan. The meat cooked up just like in the video and then I made the sauce. Wow!!! The pork was so tender and flavorful with a hint of lime and the sauce simply amazing. We enjoyed these chops with some of my wife's creamed spinach (which is delicious as well) and she says, "we need to try more of that cowboy's cooking."
I made this recipe, using what I had on hand (four skinny, boneless porkchops), reduced the searing time to 3 minutes on each side, and they turned out great. So tasty! I had to substitute a slice of finely diced regular onion, but I even had a little fresh thyme from my half-planted herb garden. Served the chops over noodles, with applesauce on the side. M-m-m! @5:12 I think you mean "scallion". Shallots are different, like a delicate sweet onion. As for the scallions, I have always called them green onion too.
Finally! A wonderful sauce for pan seared pork chops. You don't know how long I've been looking for something like this. When we make pork chops I have to wrestle the cast iron skillet away from my husband or he makes cream gravy that you could use as glue to wallpaper the kitchen. I kid you not. And he seasons it by splashing in Lone Star. This looks amazing. Thanks! (Ok I love you saying Mom and Dad about yourselves talking to the woobits. Err, dogs. You're good people!)

I made this today and it was outstanding. Even though I only had two chops, I doubled up on the sauce, so I'd have left overs. The sauce is EXCELLENT on a baked potato. Thanks for putting up this video!

OMG! I love this guy! I searched on here for "How to sear bone in pork chops" and his video came up at the top. So glad I watched it. First of all, the recipe sounds delicious! Those pork chops look mouth watering. I loved this part 8:35 and I have to say, the second I saw this part 10:17, I knew I was subscribing! 10:47 is adorable!! He is a trip, and seems like he'd be so much fun to be around. Not to mention, he's a heck of a cook! I'm going to try this recipe. I also loved the tip about making a slice in the fat portion. Wonderful video Kent I'm guilty of over cooked pork chops, there always dry inside, I appreciate the tips on cutting the fat to make them lie flatter. Those chops look delicious, and moist, great job. I'm hoping I have better success now. The butter cream sauce sealed it for me. I heard u mention Justin Wilson I use to love watching the Cajun cook, he's was a great performer. Glad to see the videos flowing again, u and Shannon stay safe.

Kent, I have a tip for heating up cast iron on a coil stove top. I turn my burner up to the halfway point. Yes, that's too hot for the task. I then put the pan on upside down, so no part is touching the burner. It will quickly come up to heat, with no damage to the pan. Been doing this for years.

Still remember my mother's. Roll the chops in flour and fry them in a little bit if crisco. Then she would make fond bread. Yeap she would wipe the fry pan clean with bread. We called it greased bread and we would fight for it.
