- Bacon Skillet (Stove Top Casserole) - One Pot Meal - For Breakfast, Brunch, Lunch or Dinner
This is one of those recipes that will help get you through the current food shortages and make all this nonsense more tolerable. You can use any bacon in this recipe - thick, thin, market, precooked, even that turkey stuff. You can use any potatoes - fresh, canned or frozen.
You can spice it up if you want but it is hard to beat the flavor of these basic ingredients when they are fried together. If you are on a tight budget and need to feed a crowd you can double your potatoes, onions and eggs. You will still have plenty of flavor and fat in this dish.
This kind meal is sometimes called Farmer’s Breakfast. You throw all your breakfast favorites in one skillet and cook they together. No big mess to clean up, so you can get out the door and take care of the critters or get the garden hoe'd before it gets too hot.

My grandmother cooked on a wood stove until I was a teenager. I learned to operate the eye covers to add wood, and leaned to cook many things on it. Love those memories.
This is my favorite weekend breakfast. Of course, being from New Mexico, we add garlic and green chili to everything. You can even wrap it up in a tortilla for a great breakfast burrito the kids will love.

Your husband can cook his own breakfast if he doesn't like what you are cooking. He should be grateful to have his breakfast cooked for him! This is coming from a man who knows how to cook!
She is still mourning the passing of the love of her life. Also the culture of the Appalachian mountains is not showing emotions outside of family and friends. It may not even be something that they are aware of, as they would mimic their parents. The very definition of being stoic in nature.

Love your meals!! I cut my bacon in one inch pieces and cook in a tall sauce pan. Save in baggie for meals like this, BLT sandwiches and BLT salad. Save the bacon grease for all kinds of cooking.

Lol Becky you really need to a story time video and talk about frying bacon, how the potatoes in the bacon grease will pick up the bits of bacon left in the skillet. Such a calming voice makes you completely forget that it is bacon grease which some thinks is bad but not for me, it's pure gold, lol. Blessings!

I can use healing prayers. Spial cord damage, 14hr surgery 12 yrs ago was screwed up. Now since last July , nerve damage has taken away my right side use, hand strength and all feeling on hands, and muscle control to stand on my own.

Been cooking versions of this with bacon or sausage for several years. Quick, easy recipe that allows one to add or subtract ingredients to personal likes or available ingredients. Fixed it with real potatoes or dehydrated hash browns from Sams. Either way it’s good. Love your videos. Always good simple recipes that are real tasty.

I call it Stove Eye now just to confuse my family when I ask one of them to shut the Stove Eye off. My daughter was looking on the oven door for it, she figured that's where the eyes would be. LoL. I kid them often with your vocabulary.

I was probably the pickiest eater in my family, before my son came along that is. My mother and I would go round and round about all the onions she puts in most of her dishes. She's also big on veggies, which I'm not.
