They look good, I have not had pig knuckles in a loooonnnnggggg time. I like the way you dressed them up with the veg and butter and then finally the bbq sauce. Take care.

Dude let me just say that this was the first time trying this and EVERYONE in the family loved it! I just bought them prepackaged and cut at my local Mexican supermarket. So cheap and easy to make! The pineapple went with it perfectly and the jalapenos was just enough heat. 😎🔥 Glad you liked it 😎✌

Is this how you did it? Smoked pig feet 6 pig feet quartered 1 pineapple 4 jalapeños 3 bell peppers 2 onions 1 cup butter 1 27.5 ounce bottle bbq sauce Bbq rub Sprinkle trotters with rub and place on 300 degree smoker skin side down. At 1.5 hours, flip. At 2.5 hours, put veggies and butter in the bottom of a pan, put trotters on top of veggies and cover with foil. Bake for one hour then add sauce and mix. Cook for ~ 2 more hours at 275. Rest for 30 minutes.

@@madswinebbq I’ve done this recipe twice now. The first time I jacked it up a bit. The rub I used didn’t have salt so they turned out bland. Salted them after the fact and once the salt was right I knew I had a winner. Smoked some more yesterday (along with some pig tails which cook exactly like pig feet) but started these out with a dry brine a few hours before applying the rub. This cook went off perfectly smoothly and the feet were ready when the rest of the meal was ready. The rest of the meal included 6 racks of ribs but the feet & tails were the stars of the show. To put that into context, we have a famous rib joint in my neck of the woods (Leatha’s in Hattiesburg, MS) and the ribs I smoked yesterday were at least as good as her’s (maybe better) and the feet/tails were better than that. So yeah, you hit a home run with this one.

I love pickled pigs feet too. These were a hit! Very sticky, tender, sweet and the jalapenos gave it the perfect heat! I'm glad you liked it 😁✌
