Yes my father was a very fond of smoked meats especially fish and pork,in fact made a smoker out of an old stand up refrigerator, some of the best food I ever tasted was prepared in that smoker,hey keep doing what you know you're educational and you don't have to be a chef with 10+years of experience thanks.

Yes it was a custom build by a amateur grill maker had problems with it reaching over 200 deg 93.3 c when i got it home. Grills like this should always be bought from a good builder. I got lucky on this cooker and got it for cheep thank God I knew how to get it running took a minute to figure out but she go's up to 500 deg now 350c. Great Smoker.

Those beef ribs look great. To bad restaurants usually get those Xtra meaty ones.
They do if you're paying top price and it's hard to keep them moist sitting around waiting to sell them.

When I watch your channel I end up so hongry 😂🤙🏻❤️🙏🏼I love pig feet and ham hocks🤙🏻❤️ I used to hold pigs fer my PaPa to castrate for Uncle JC Spearman I saw my Uncle Johnny throw a Bull in a Corral 10 times his size fer PaPa to castrate those were what we call The Good Ole Days😂❤️

I went straight to the trotters seining as I have long ago master Dino Ribs/ Beef Short Ribs. My experience with pig trotters have mostly been what I learned with Mexicans. I will will be doing your version of trotter seeing as they might still be affordable.
20:59 😋😋; Really 🤓🤓 for those trotters; You are 100% correct no boiling of the trotters before smoking...lose that icky sticky gumminess!! ( The ribs look good too Bro.) but you can't get between a 👨🏾 and Pork Trotters or Hocks .

Thank you I got this Smoker a while back it was a custom build that had problems keeping temperature. Took me a few weeks and a simple modification on the burn box and now it's a great cooker holding temperatures up almost 500 degrees. I can hold 280 deg steady all day.

Did you ever try "no trim??"
I enjoy slow roast but prefer to use meat direct from the animal.
The trim you remove renders away during cooking and adds flavour.
I remove to trim after slow roast.

What temp were the pig trotters at? Im a White boy from Minnesota, who is trying them for the first. Help me bud.
225 deg get some color on them and rap them puppies to fork tender.

I can't cook like you you are one of the best but I disagree with canola oil that stuff is unhealthy I'll do a good olive oil look at what canola oil does to the body
Of course that was a little bit but still
I love your comment, but it cooks off and out of the meat into the fire so good oil would just be waste of money sir. The meat pushes out the grease as it cooks with called rendering down. I hope this helps and thank you for your kind words, God Bless.
