I'm healthy I don't have diabetes but I cook rice and whole wheat pasta and sweet potatoes and I let it cool down and put it in the refrigerator for 12 hours. I eat rice and pasta in moderation and that helps, I don't have to do a lot of abdominal exercises I have a six pack for my age.
The open question is how much resistant starch refrigerated rice actually contains. I have seen a study that indicate that less than 2% of the starches in rice become resistant after a refrigeration of 24h at 4 degrees centigrade. Not a lot.
Thanks for the video, I love rice, born in Louisiana & the first time we didn't have rice for a meal I was shocked (my mom was a Texan, dad was full blood Cajun) & I have been eating rice now for 64 years & I have my recipe perfected for perfect rice like the Asians/Chinese, but now I will cook it, let it cool down & refrigerate it for 24 hours, so I will always have a supply in my refrigerator ready to heat up. Suggest also cooking it to get rid of most of the arsenic and then cool it down in the fridge. Videos out there on how to do that before finishing the rice like on this video. Also rice water is good for orchids to help bring them back if they're having issues.
I've been doing this for a long time without even realizing it. My normal breakfast is re-heated 24(or more)hr rice from the fridge topped with lean ground turkey, then 3 or 4 eggs on top. This is after doing my morning steps (usually 12-15000).

Although resistant starches are less digestible and may not spike blood sugar as much, the total carbohydrate content in rice is still too high for most people following a strict keto diet. I have watched several videos concerning resistant starch. None of them address the issue of how much of the starch is converted. All of it? Half? Quarter? I'm trying to limit sugars and starches.

Resistant starch ONLY WORKS if you eat them at their frozen or cold stage. The ONY RICE HACK is to boil it exactly like how you would for basmati rice making BIryani. You strain them after and it leave the starch with the water. 100% WORKS! THAT WORKS, THIS DONT.

It makes sense because the time and the extra heat probably help to convert and breakdown the starch avoiding blood sugar spike /insulin. Over reaction. I also rinse mine and let it sit in the water for an hour then rinse a couple times before cooking

Rice is for fun not as a daily Main Food unless you burn it thru physical exercise.... Eat meat and animal fat ...grain, fruit and processed food are not good for us and should take it perhaps as a small snacks once or twice a week after meal.
Sad to say, the RICE contributed big time to your Diabetes and your family as well. Do a lot of Intermittent Fasting + KETO to reverse your disease, and maybe then, you can eat some rice again. BUt for now, you are just adding fuel to a fire.

NO. This doesn't work, FYI. Rice has too much carb content to even be KETO even on a 40% less
So we can just buy the pre cooked sachets of rice as this would have already transformed, especially if stored in the fridge.
