thank u these look great! if i wanted it to be oil free should i just omit the oil or replace it with something else? also wondering if anyone has any suggestions on what to replace the asparagus with for a similar flavour combo bc i cant stand the texture ;-;
Just made the fajitas one using soy curls instead of tofu. I has small whole wheat tortillas that I folded and put in the toaster, so it got a bit hard and we ate it like tacos. So so yummy! And also felt really light 😍
Good evening, I made the asparagus onion and mushroom sheet pan part for part of my dinner, sooo good even without the fennel, will try that next time, it will be a go to in the future...thank you for the tips and recipes. Very enjoyable.

I use tahini to coat my tofu! It goes crispy in the oven and adds a yummy nutty flavour! You could use other flavours into the tahini too. In our house we love tahini and sweet chilli over our sheet pan tofu and veggies! 😋

As for requests, I would love it if you could suggest some "fillings" for spring rolls - I bought a pack of the transparent rice wrappers a while ago, and now have no new ideas of what to make them with. 🤣 Have a great rest of the week!
I just made the fajitas, I used carrots instead of mushrooms since I didn't have any mushrooms. I also added garbanzos. I love that you can customize with whatever veggies you want and that it's fast and easy as I don't usually have a lot of time to cook. It was so easy and so delicious. Thanks so much for sharing.
I make mini sheet pan meals in my air fryer. I have one of those double drawer ones with the 6 functions, so I can beat the heat of the oven in the warmer months!!
I'm craving those fajitas but I plan to make all of them! They all look so good, I also like that they use similar ingredients makes shopping and prep that much easier too.

I typically do things like this on a silicone mat (silpat) on the pan with no oil. Gets you similar crispness without sticking.

I think the asparagus mushroom fennel dish would have been awesome with pearl barly or pasta! I would have used a butter sage sauce with it!
