How to cook rape blossoms

  • In this video, I explain in an easy-to-understand manner the boiling time of the recipe for mustard-dressed rape blossoms for those who are not sure about it.
    If you are unsure about the boiling time, we recommend that you boil only one rape flower at a time while watching the video.
    If you are not sure about the right amount of boiling, try boiling one at a time while watching the video.
    (Ingredients)
    100-150g rape blossoms
    1 liter water
    1 tablespoon salt (2% salt)
    <For the dipping sauce
    Dashi broth 240cc
    20cc light soy sauce
    20cc mirin (sweet cooking rice wine)
    1 teaspoon Japanese mustard
    If you want to use Japanese soup stock, click here.
    ↓ Water
    240cc water
    1/2 teaspoon of Hondashi
    (*Dissolve Hondashi in about 50cc of hot water, then add 190cc of water to make 240cc)
    17cc light soy sauce (just over 1 tablespoon)
    20cc mirin (sweet cooking rice wine)
    1 teaspoon Japanese mustard
    (How to make)
    1. Lightly rinse the rape blossoms and cut off a little of the root side.
    Cut in half, separating the tip from the root.
    Bring 1 liter of water to a boil with 1 tablespoon of salt.
    The rape blossoms will boil quickly, so prepare a bowl of ice water nearby for rapid cooling.
    5. Put in the root side only and boil for 30 seconds.
    If it's hard to tell how well it's boiled, try eating just one of them in iced water and see if it's still a little hard.
    Next, add the tip side.
    Boil again for about 30 seconds.
    9. Take only one of them out of the ice water, and when it is cooked well, take all of them out of the ice water. (Do this quickly).
    Make the dipping sauce. Put 20 cc of mirin in a small bowl and heat it in the microwave for 30 seconds to remove the alcohol.
    Add 20cc of mirin and 20cd of light soy sauce to 240cc of dashi broth.
    Put 1 teaspoon of Japanese mustard in a ladle, add a small amount of dipping sauce, dissolve it, and add it to the dipping sauce.
    Put the quenched rape blossoms into the well-mixed dipping sauce, squeezing them tightly.
    Let it sit in the refrigerator for 1 to 2 hours to absorb the flavor.
    If serving immediately, add 1/2 teaspoon of light soy sauce.
    Serve and top with a little shaved bonito.
