They feel more at ease talking with people of the same sex. Shuichi is a guy, and is also her crush. She puts on herself this pressure of being more clean and polite when she's talking to him, again just like how a normal person acts. There is also the factor that Shuichi is really polite and doesn't make any lewd jokes in cannon, so when he does it in this mode it understandably throws Kaede and every one else off.
