    All I have to say is, give this recipe a try! I like mines really sour and you can see from my reaction that I could not stop eating this soup. By far the best I have ever had.
    Ingredients
    8cups of water
    2lb catfish
    1lb shrimp
    Basil
    Rice paddy herb
    Saw leaf herb
    Green onion
    Galanga
    Lemon Grass
    Kaffir lime leaf
    Garlic
    Tamarind mixed with hot water or you can use tamarind soup base
    Sugar (optional, we didn't use any and it tasted great)
    Salt
    Fried garlic
    Pineapple
    Tomato
    Fuzzy Melon
    Granulated chicken flavor soup base mix
    Fish Sauce
    Total cooking time - 1hour

    The fact that she cooks the catfish first so that the soup itself won't have that fishy taste so she cleans it from frying it a little. Omg I love it! Definitely going to try it out!

    I made this today and it was good! Even though I didn't have the fresh tamarind, only the soup base. I didn't even have fish, but shrimp. No fuzzy melon either. I added baby corn and mushroom. Overall it was still good. I love how her recipes are so simple!

    Love these videos! Your mom is so sweet and I just love the way you two bond together in the kitchen! I just laughed at the end about the shrimp comment and getting a bigger bowl.     I've lived with my mom majority of my life. She is my main provider for Cambodian food... I am moving to El Paso in a few days so I'm gonna have to learn how to cook for myself.     I made this soup today and it came out amazing! Your mother is amazing and thank you so very much for sharing this video!! I replaced the fish with chicken, I am not a big fan of fish and I also added lotus rootlets

    Oh my!! I have discovered this soup while I ate at a French and Cambodian restaurant in Boston, MA called the Elephant Walk (Highly recommend.. been going for about 5 years) and I never thought to google the recipe util now! I can't wait to make this myself!

    My mother in law cooks like this. Tried to replicate it, had no idea that I was complaining that mine was too sweet, because of me not realizing how much tamarind I need to please my sour Czech taste... I'll try again now.

    Awww that's nice Mom Son bonding...im sure the son is a good cook to now. Thanks for the tamarind trick. I have never thought of adding hot water to get the tamadind base out of it. I will definitely try this recipe.

    I think your mom mentioned about frying the catfish is that she would rather not put the raw fish directly into the soup base because of how stinky the fish is and how it would release its fish aromas in the soup. She rather fry the fish first so it doesn't have that fish smell in the soup.

      Polin Hem you dont fully cook the fish just light cook it until the smell and blood is out take about 5 min.

      You only need to sear the fish for a few minutes to get rid of the fishy smell

    in southern Vietnam we have Canh Chua (translate Sour Soup). the recipes for canh chua is very similar to this dish.

    Your mom said to fry it until the juices/blood is gone so that when you put the fish in the other soup pot it wont be fishy.

    Your mom is saying that you pan fry the fish just until its lightly browned so that the skin isn't slimy anymore. You pan fry so that the soup doesn't get that "fishy" taste. If you don't mind the fishy taste, you can go ahead and cook it in the soup directly. Lol, sorry, just wanted to clarify to the viewers on why you'd want to pan fry the catfish. :]

    Instead of putting the tamarind powder in the big pot because not everyone likes it really sour. you could have just scooped your own bowl and added the tamarind powder then.
