    I like to use palm sugar because it gives a little flavor of the palm sweet smell and also was my grandma favorite.

    Great recipe! One thing though, the curry paste listed should be lemongrass paste. Learned the hard way.

      2-3 medium size lemon grass, 4-6 kaffir lime leaves, 4-6 cloves garlic, 1 ounce galangal, & turmeric powder. Combine all ingredients in food processor.

      Try pineapple juice, onion, or ripe papaya. All of these will help tenderize the meat. Don't put too much or your meat will become mushy.

      Aswajar hi, it’s actually Lemon grass paste. We call it Kreung, which we also use it to make curry. Yes, I did use Kreung. (Lemongrass, kaffir lime leaves, galangal, turmeric, and garlic) you can chili or paprika to make it red.

      D Heirloom 2 stalks lemon grass, 3 kaffir lime leafs, 1 teaspoon turmeric powder, 5-6 pieces garlic, and 1 oz. of galangal.

      Actually it's not too sweet, because I used 6 pounds of meat. It has a nice balance. You may reduce the honey and sugar, if you don't like it sweet.

      Kevin Tran Hi Kevin, Kreung is a Cambodian term which is just lemon grass, kaffir lime leafs, garlic, and galangal blended together. These items are available at Asian market. You can use turmeric or paprika if you want it to be yellow or red.

      Ingredients:
      6 pounds of chuck beef1 cup curry paste3 tablespoons paprika1/4 cup honey1 1/2 tablespoons salt2 tablespoons chicken soup mix1/4 cup olive oil (any kind is okay too)1/4 cup fish sauce1/2 cup cooking wine5 pieces palm sugar
