Wow, great! Have you tried Moscou Mule with a ginger foam like this? Here in Brazil, about 10+ yrs ago, a bartender called Marcelo Serrano combined vodka, lime and a ginger foam (made with a iSi can) and changed the history of this cocktail in our country. You should try it for the channel.

Made the drink and loved how refreshing it is, the fluffy orange is delicious. I want to try it with apples and a whiskey any suggestions for the brand? Another question i have no experience with gin and want to try it any suggestions on brand? I would really like an easy or refreshing drink.
You can simply use lecithin or a different emulsifier cause the egg white add a taste into the mixture, I personally don't like using that. That drink would be great also with Aperol foam on top instead the Fanta, kinda different Paloma. There are loads of possible combinations.
I know there’s other ways to achieve that kind of result. I just thought of it and had to make it with what I had and tried to make it as simple as possible so nobody is scared to make it. But I liked it so much, I think I’ll dig further the concept
Im gonna try this at my bar this week but I think Ill use "foam magic" from Modernost pantry and put it in to my iSi canister. Gonna switch out the lime for our fake lime juice too and see how that feels.

Thanks man! It’s a little tough to explain by writing but if you look at my clear ice tutorial for the perfect ice ball, follow the tips to cut the ice but simply think rectangular instead of cube. Hope this helps. Cheers
It might but I blended the juice for about one minute at full speed before it got to that level of fluffiness. So I think there are chances a dry shake wont be enough. But I didn’t try

Sorry - but here there is a lot to unload. a) I can think of many better soda pops than Fanta Orange. Just saying. Fanta Apple is interesting (and oppose to Miranda Green Apple has no artificial flavors) - but also some artisan sodas come to my mind... b) Substituting Fanta with orange juice, sugar, lime and club soda is... dilettante. Sorry! Sodas are notoriously simple to make, if you know the secret behind them: first aroma: you want to use the zest of orange (yes you can use the juice - but the zest is "zesty".). second: sourness: you have *got to use citric acid* (or in some other instances you could use other isolated acids). This will give your drink a typical soda characteristics, which cannot be replicated with lemon or lime juice. third: carbonation: if you add ⅓ of club soda to a drink which is overall uncarbonated - you end up with an under-carbonated drink. Either way use a Perlini cocktail shaker, or add everything into a carbonation bottle (or device). fourth: sugar concentration and acid concentration is also key. ca. 100-120g sugar per liter and 0.2% citric acid (based on the sugar) is key. c) Egg white: I can only say: yuk! We came so far - do we still have to use egg white? Because a good percentage of your customers (or friends or tasters) will taste "wet dog". Rather use lecithin (it doesn't taste good - but still better than egg white) or aquafaba. d) I would rather use an air stone than an immersion blender - which gives you lighter foam (actually a cloud). _way to go..._

Would you recommend making a larger batch of the cloud in an ISI cream whipper? If you were to make something like these in a higher volume setting?
I would have to try and see if the texture would hold up. But if so, absolutely because it was god damn good!
