    Just wondering if adding the corn syrup changes the flavor or texture of it or just helps prevent the formation of sugar crystals? Also, if the butter was added at the beginning, would it give it a brown butter flavor which might give the fudge even more depth?

    I've tried this recipe 3 times and had tp throw it away each time! I follow the recipe to a T and the mixture is grainy every time. Not sure what I'm doing wrong. When you first mix the ingredients, before cooking, how long do you mix it to get the sugar to dissolve? It doesn't say in either the video or the written recipe. Please help

      It definitely sounds like your fudge is sugaring. Are you using the corn syrup? That's extremely helpful in avoiding sugaring, because it has a different structure than the sugar crystals. When I started cooking, I'd say that my sugar probably hadn't completely dissolved, actually. The more critical issue is using the two types of sugar structures, and being very careful to wash down any sugar crystals from the sides of the pan when you cook. Any crystals that form on the side of the pan can fall in and become a seed crystal, setting off a chain reaction of the formation of sugar crystals.
