Have you tried bolting a torque honing plate to the top of the engine while honing? The head bolts deform the cylinders some but I have never seen anyone measure how much
Instead of dry honing, why don't you put block in a storage bin and use fuel transfer pump? (even small fountain pump works) I use an ordinary plastic bin about 30"x 20"x18" and diesel instead of high sulphur cutting oil. (it's cheaper, around $5.00 a gallon instead of $55.00) The school I worked (MMI, Orlando) at had deep steel tanks and fixtures to hold cylinders at convenient angle but they took up a lot of space.
I stumbled across your video a few days ago, you are spot on... for the most part. It is amazing how many people think they can successfully hone a cylinder with a three finger hone. I use a Sunnen portable rigid hone. But, why don't you use honing oil? Oil cuts the friction down, thus diminishing the heat and the heat expansion problem.
Oil the stones is clearly better but I have not found the need in what I do. The oil does aid cooling which means more consistent sizing is possible much quicker when using oil.
AC - for new rings on a previously low mileage block (still round with deeper honing marks still present) would you recommend just a hone with a fine stone for bedding them in?

I don’t do enough to warrant the expense of a tank and a pump.

Clearance depends on piston type and application
