I have the 14060M with the extra COSC lines on the dial. I know folks might prefer the 2 liner. But I like that the 4 liner is less common.
The 14060M two liner dial is my pick for #1 most underrated. It has the older proportions, a alloy bezel insert, tritium lume, no dial clutter, yet its the cheapest Submariner money can buy!

I’ve never understood the dislike for the Rolex Cellini Moon phase 50535. I think it’s a beautiful, traditional watch.

I was expecting watches from the present catalog. 😅 The underrated ones are the ones below 36 and are usually in 2 tone or gold usually with stones. Those are actually the ones you can get at retail in ADs.
The most underrated Rolex is the Cellini Rolex Prince ref # 5440,5441,5442, and 5443.

I'm going to an interloper here and talk about Omega. The late 90's Omega Seamaster Professional Chronograph is such a BOSS! Looks great, functional and extremely accurate (mine is +2 seconds per day). And the James Bond bracelet is the most comfortable bracelet I've ever worn, including Rolex. 😊

A modern underrated rolex is the seadweller 4K especially the 116600. Very limited run and high end quality.
Displaying religious symbols is not good for business, if I may advise. Unless it is intended to mean not wanting to deal with people of different beliefs.
