    RECIPE
    Cheesy Oatmeal
    1 cup (80g) rolled oats
    1 1/4 cups (295ml) water
    1 cup (235ml) 2% Real California lowfat milk
    1 teaspoon kosher salt
    1/2 cup (50g) Real California shredded pepper jack cheese
    ground black pepper
    chili flakes
    oil for frying eggs
    eggs (1 or 2)
    toasted walnuts
    scallions
    Soy Sauce Oatmeal
    1 cup (80g) rolled oats
    1 1/4 cups (295ml) water
    1 cup (235ml) 2% Real California lowfat milk
    1/2 teaspoon kosher salt
    1 tablespoon soy sauce
    2 teaspoons sesame oil
    2 links Chinese sausage
    oil for frying sausage and eggs
    eggs (1 or 2)
    scallions
    COOKING DIRECTIONS
    Cook Oatmeal: Add the rolled oats, water, milk, and salt to a saucepan. Bring the liquids to boil. Then reduce the heat and let the oatmeal simmer for 5 minutes. Stir the oatmeal occasionally to keep the milk from scalding at the bottom.
    For the cheesy version: Mix in the shredded cheese, black pepper, and chili flakes. Serve the oatmeal in bowls with a fried egg, more pepper, toasted walnuts, and sliced scallions. Feel free to add a small pinch of flaky salt over the cheesy oats, if necessary.
    For the savory version: Mix in the soy sauce and sesame oil. Cook the Chinese sausage with 2 teaspoons of oil for a few minutes, until the sausage starts to brown. Serve the oatmeal with a fried egg, Chinese sausage, and scallions.

    Made the 2nd one a few minutes ago...it tasted so good..I could ditch my rice and have this at lunch too..so creamy and filling...

    I eat polenta for breakfast made with butter & milk; sometimes with cinnamon & raisins as well. I think I will try these options with polenta. Thank you for the creativity.

    the soy sauce recipe reminded me of how my mom makes congee with oats instead of rice for my dad (diabetes lol), also reminded me of clay pot rice! I'll definitely try it!

    Lovely recipes. The second one reminded me of how we serve porridge in Iraq, with gooey and crispy sautéed onions (preferably in ghee) over the top, whether we make a savoury or sweet oatmeal porridge (we use steel cut oats and top them with date syrup and cinnamon… and the onions!). :)

    I always toast my oat steel or other oats (except not microwave packets will not work) in the pot stirring until browning then add boiling water. Been doing this for many years.

    Sounds different! Cabinets are running very low. I do have all the ingredients. I will try it and perhaps "tweak" the recipe with whatever else I can find! Who would have thought!

      Hmm, you can definitely cook a big batch and then just reheat it for subsequent days. I wouldn't do this for the raw-style overnight oats though. For instance, the cheese in the cheese version wouldn't melt/

    Hi I was looking for health recipies. Oats lower your cholesterol but the eggs on top just raised it again.

      Correct! Eggs raise your HDL (good cholesterol, High Density Lipoprotein) which removes excess cholesterol from your body to be processed by your liver into bile for digestion and toxin removal. HDL cholesterol is proven to lower your risk of heart disease and stroke. 😊

      Actually the cholesterol in eggs is the good one. Our body still need cholesterol and egg is a good choice.
