  • Almost everyone I know, makes their oatmeal in a sweet preparation. I would rather start my day with something savory and hearty packed full of umami, nutrients, protein and some spice.
    Thank you for tuning into @Cooking with Chef Tuan Today I will introduce to you a new style of cooking oatmeal.
    I am more of a savory person and I know a lot of you are as well. So check out this recipe for a great way to jump start your day.

    Ingredients (1 healthy portion):
    2 C water
    1 tbsp mushroom powder
    70 g oats
    1 tbsp chopped scallions
    1 tbsp cilantro leaves
    1 tbsp fried garlic (mine were store bought from the Asian market)
    1 tbsp chili oil (use whatever you have, sriracha works too)
    1 poached egg (I did a 63 degree C sous vide egg) a poached or soft boiled egg works as well
    black pepper
    a drizzle of sesame oil (optional)
    a drizzle of tamari or any soy sauce you prefer (optional)

    I used to hate oats, then a month back I used a ramen recipe to make oatmeal. And today after watching your video, I totally agree this is the best way to eat oats. Love from India

    I like to add shredded/ground chicken, stock cube and mushrooms to mine. Caramelized onions are good too

    Omg I’ve had a sous vide setup for over two years. Never crossed my mind to make soft boiled eggs 😭😭. Will definitely give this a shot

    This is brilliant! I don’t know how I have never heard of savory oats in my life! I have pounds and pounds of oats and have been wanting new ideas to eating them but never thought of savory and I’m so excited I can’t wait to make this for my brunch bc it’s 2 am and I’m watching food cooking tutorials.     just made some congee, its really delicious, i dont taste the oats at all it more like a normal congee and i added fish. Thanks Tuan

    But… I like my porridge and oatmeal, piping hot. So I’ll have to be cooking mine up again and add my poached egg right out of the hot water, onto the top of that delicious oatmeal congee! Yum! Good one! Thank you! 👍🏻

    Curious to try to do this with steel cut oats (they are healthier), but cooking time is obviously very different.

    Really interesting re-interpretation for chao. I like the idea of savory oatmeal and I think your version is very innovative, but I'm not sure that I would like the texture of oatmeal over the traditional rice as a base. :)

      You should try it. Cook it like how you would cook the rice, until it over expands.

      You'll need an immersion circulator like an anova,Joule any one of them really. Or you can always sub a soft boiled or even a poached egg.

    What brand of mushroom powder do you use?

      It just says "mushroom seasoning". You'll find it at any Asian market.

    Can I sub mushroom powder with mushroom flavored soy sauce?

      I wouldn't recommend that as a straight substitute. If you don't have mushroom powder, then use a vegetable stock and flavor it with the mushroom soy. That should help your soup base.

    "Dusting off" your oats- (using a siev or strainer, with smaller holes) works even better! No "slimey taste/feel" in your mouth, no slimey-ness hanging onto the edges of your bowl!
    Tada! Problem solved!
