I liked how you went a completely different direction than expected with the cook. Smish burgers is a great idea! When you toasted the buns I thought for a second you were going to put a bit of mayo first, it is amazing when grilled on bread, you probably already know that though, just had to throw it in. Ian is such a cool cat. He would fit right in with you and Aaron.

Crappie are probably my favorite freshwater fish to eat. I'm from Minnesota and Walleye get all the hype. Crappie are so fun to catch. That burger looked amazing too. I've really only fried them.

Hello Will, I saw you clean the fish, not bad. I watch other UA-camrs and two are fun to watch for is Reed the fish monger to watch him fillet a fish is like watching poetry in motion, he's a regular butcher of fish and Taku the Outdoor Chef and he uses nothing but a chef's knife to clean the fish and he does a great job of it, but it is watch him cook is something else but he is a trained chef after all. PS I love what you did with those crappie they looked delicious.

Sweet catch thats a huge crappie Will. In Kentucky normally they are about 9 oz your 2lb one is awesome. I use light breading and pan fry them with sausage. The mix works for me. Mostly we eat crappie for breakfest here.
Great collab...looks awesome! I love how you and Dibs brain and bleed and treat fish in general. My Dad used to tell me to carefully handle fish because letting them flop around on the boat or dropping them on the boat can be traumatic because most are not built/evolved to handle hard surfaces (e.g., brain/skull) because they live underwater...he lived in Japan for a long time and their fishermen are very careful and respectful with how they handle their catch...especially things they plan to release. So I hate to see people dropping fish and/or letting them flop around (unless you're going to dispatch them). I know, sounds over the top, it's just a fish. But I appreciate how you guys treat them with respect.

Happy to see you up in my neck of the woods. Those big specks are a blast on ultralight gear. I’m not the biggest fan of fresh water fish in general but a mess of specks is decent eating. I find they need more salt to cut the sweetness than I would use on a saltwater fish.

Two things one go light on the mustard and two add some breadcrumbs actually three things the third is after you make the patties put them in the fridge for no less than 30 minutes

Good stuff. We make "burgers" like that but with Tuna and Asian Chili sauce. Green onions and avocado. But cook it rare and serve with wasabi mayo.... Pretty work as always.

If you get the chance, try a few crappies on the bone with batter, or flour / white corn meal / salt / pepper, then fried ... or filets if you have whoppers 🙂. They're some of the best fried fish Ever(!!) 🙂. We always release ones that are obviously full of eggs, but if you happen upon some by surprise, treat yourself(!!) ... SUCH a pleasant, delicate flavor!! Finish frying fish, reduce heat considerably (or they'll start popping), batter or flour as with the fish, and fry until just firm but not overdone. Such a pleasant flavor ... same goes for catfish eggs too 🙂. Cheers 🍺🍺 🙂.

Will you knocked it out of the park again. I will have to try making these. Got a freezer full of crappie filets. We also make crappie cakes out of crappie just like crab cakes. Ceviche with crappie is excellent just let it have a good soak in the lime juice before mixing and eating.

I grew up in Michigan and caught my fair share of crappie and lake perch, you can't go wrong. They stink like hell but they are delicious! Now i catch striper all day long in SoCal and just as spoiled with amazing fish that can be eaten and cooked in many ways.
I have never caught a crappie that big when I lived on the East Coast in Pennsylvania, Delaware or Maryland. That is huge compared to any I have ever caught.
