Florida's Most EXPENSIVE Fish...Here's Why! Catch Clean Cook (Florida Pompano)

- Today we are commercial fishing for Florida Pompano out of Jupiter, Florida. Our goal was to run the beach looking for a fish known as pompano. These inshore fish roam Florida's Coast from Late fall to early spring as they migrate down our coast with falling water temperatures. These fish are highly sought after for their delicious fillets and they are one of Florida's most expensive fish, due to their nature of being here one day gone the next. These fish are highly unpredictable and are very rarely in the same area for more than a day or two! While looking for pompano we found an huge school jack crevalle and had some fun catching them on poppers as well! I prepared a delicious grilled pompano on the @campchef Apex grill, Enjoy!

Viktor! Among other things, what I like about your videos is that in the video title you always indicate specifically what kind of fish you’re aiming at and we know that at the end of the video you’re gonna show and explain to us how to cook that particular species. Some fish are good for grilling, some for broiling, some for pan frying, some for ceviche or sashimi and so forth. No other blogger does it. Thanks much for that.

There was a reporter for the St.Pete Times that said pompano were just the juvenile form of permits. When people pointed out that they weren't the same fish, he stated his dad told that when he was a kid and that was his source. He refused to back away from that despite people telling him otherwise because 'it didn't matter' and would 'tarnish the memory' of his father so he refused to correct himself.
My dad told me cobia were the juvenile of great white sharks so I refuse to believe otherwise 55 years later. RIP pops you big dodo 🦤

My dad always referred to a measuring unit of quantity of boudin or sausage as a “stool”. When I was a kid he sent me into the store to the butcher counter and told me to get “about three stools of boudin and two stools of sausage”. The butcher was not amused.

Just caught my first ever pompano and permit a couple of days ago. First time ever fishing in Florida. 3 permit and 11 pompano! Great fun and love the flavor!
Victor I am truly amazed at how you value even the trash fish that are caught like Ladyfish, that Catfish, Puffer fish and others. Your love of sea life and that most fish can be used or have some value. I once caught a 5lb pompano on Biscayne Bay Miami years ago off a wall behind some condo's. It was a good fight but was well worth it. Thank you for sharing your videos and recipes in cooking any kind of fish.

Congrats to Adam on his new boat and love the support you give him as a friend and and angler. My mother caught a pompano in FL and made the best meal with it. We usually cook it whole which allows you to get all that head meat. Here in IL, we have access to pompano fish in Asian grocery stores. Definitely on the pricey side right now. Try this recipe…
• In mortar, pound lemongrass, shallots, lime leaves, Thai chilies, garlic and rice until you get a sticky paste. Add a tablespoon or 2 of fish sauce to the paste. Make 2-3 slits/cuts on the side of your fish and smear the paste with some salt, and a little sugar. Wrap in aluminum foil and grill. Thank me later 😂 it’s a popular southeast Asian (Laotian/Thai) dish.

The best tip for fishing predictors is that cat analogy. Such great info there. They need that instinct reaction sometimes. That’s how I fish for freshwater bass a lot. They need that reaction

Looks similar to Spring to early Summer Striped Bass fishing right off of Kismet, Ocean Beach, Ocean Bay Park, South Shore of Long Island.. Would be on bunker(menhaden) pods with big live baits.. Sometimes they push right up on shore though, chasin tails.. Sometimes they’re in
50-60’ 1/2 mile off the lighthouse always fun.. Good Show!

Many years ago, while diving the Suwannee river around Mayo, I came across a school of Young Jack Crevalle . Not usually seen in fresh water. It was fun to watch them surround me before they left.

Love the video. My neighbor owned a fish market & used to take his boat trolling in the bay on Sundays. We caught over 100 of those smaller jacks. Now I know why he kept them.

I haven't watched your videos in a while so it was great to see you back in action I don't know if it was just me but it's good to see that you're back making videos with your girlfriend Brook I really love the pompano fishing I did that years ago with the same rigs you use and I uh and I went out of new Smyrna beach just pass the jetty on shore Hit a lot of blue fish which I used to strip for bait I noticed you catching jacks in this video my biggest Jack out of paunch and left off the Pelican reef was 65 pound which I had to bleed that fish and smo K but I did a light smoke on it and the flames were massive I don't remember much about it 59 years old now It was many years ago but I do remember bringing those fillets home good luck keep up the videos and let's see some more pompano fishing

Here in NC 200 miles inland, I buy whole fresh 3 pound pompano for 5.50 per pound at the fish market. They have everything.

Hi man, i’m italian and i’ll give u a tip. Try to put the bruschetta (your pronunce is great!) on a grilled bread slice as entree with a glass of wine. Then Eat the pasta alone, with less souce, and after that serve the fish maybe with some salad. Take your time, it longer but it’s worth it. let’s finish with ah espresso and you have a true italian dinner. Congratulazioni for your channel!

I'm asian and pompano is a very prized fish. My all time favorite is pompano sinigang soup. Pompano are rare in texas but are more prominent in the fall which I target all season long. The best way to eat pompano is in a soup. Pompano is like no other fish and altogether with the skin, fat, and flesh it's amazing.

It would be cool if you guys could do a catch clean cook for lizard fish, because it’s perceived as a trash fish but it’s actually quite a good fish when comparing it’s meat yield, texture, and color to more known/liked species.
If I could catch enough of them I would!

No worries if it’s not possible, but it would be cool for people and myself to see that lizardfish is actually quite a decent quality fish, when prepared and cooked well.
One minor correction on where you can catch them. they go further north than North Carolina they are caught in the Chesapeake bay in Virginia as well

Great fishing and cooking! Tiny suggestion, cook the pasta al dente and add the pasta to the sauce with a small amount of the pasta water. Not the other way around like you did.

Cool video, we often get on big schools of AJs offshore and catch them on top with plugs like that! I thought you were making a Romesco sauce with the roasted red peppers! I bet it would phenomenal with the pompano, I make it to top snapper and grouper. Love you guys videos!
Besides the rinsing of the saltwater fish in salt water, another good tip is to only use kosher salt on your fish when cooking. Iodized salt changes the flavor & can make your fish have an "off" taste.
With those schools of jacks. As fast as you can. Pencil poppers work better when they’re like that.

Pompano my fav fish to eat in texas but i dont think i ever caught one or hang around here...but when we do fish and catch mullet we eat it when we get skunked and its fresh just alot of bones
