Even though you’re younger than my kids I can relate. Your honesty and ability to express yourself allows me to judge you as a good person and someone who could be a friend.
Learning any sort of trade back in the day was brutal. But to be honest it’s how you found long term dedicated people who stuck with it. Watched a lot of people leave within the first week and find a whole new career path. Not saying it was right, but worked to a degree
You guys are both easy going guys, I love spending some time watching and learning from folks that are doing it because they love it.. not for a paycheck.
So grateful for your great escape in that I get to see your vids. You did the hard yards with b**tard chefs and somehow survived that to bring us your joy for cooking good food. Much respect.

I was talking with my 10 year old son one night about why I watch certain UA-cam channels and why I don’t care for others. I explained that I enjoy both Aaron’s channel and yours, because of the people that you are. You’re both real dudes that don’t try to be fake or something you’re not. Although the videos are just a snippet of life, you always act the same regardless of who you’re with and treat everyone with respect. I told him to do as I’ve done and surround himself with people like the two of you and life will be so much better!
That really does make me happy. Like I said, in the video, one of the things that drew me to Aarron as a friend was the way that he regarded Fishing and the way he treated me as a human that he didn’t know when you start weeding out some of the bad people you definitely end up with less friends, but better ones.

I love the feedback and honesty. Hopefully this enlightens all of us fans as to the difference between cooking for passion and cooking for a job. I also work in the food industry but on a slightly different scale. While I’m not at your level, I love to cook for family, friends and small events. I’m often asked why I don’t open a restaurant and it’s for the exact reasons you outline- I cook for the enjoyment and satisfaction of serving simple and delicious food to my friends and family; I think the stress of “performing” in a commercial environment would take all of the enjoyment out of it and food prepared without passion is just mundane. What a great episode. Interesting journey you have been on. I started fishing in the keys’s in the early 70’s when the Travelidge motel cost $12. I belong to a great fishing club that taught me so much. We went all over the keys, Bimini, Flamingo, Stuart Great Harbor Cay and caught great fish. Yourchannel reminds me of the fun I had. Glad you can take a break and enjoy your life in such a beautiful spot.

What exexangler says - this is real. The way I fish and hunt then try to cook something to share with family and friends. Not at your level Will, but you start with great ingredients, treat it right from harvest to table, it's hard to go wrong. WOW!, Well said! When I saw the title, I definitely wanted to know why you wouldn't cook in a restaurant again. What a way to start answering a kinda broad set of questions and pulling it all together to give us great insight and a bigger picture of yourself. It seems that you fed us the information in a similar way to how you cook up a dish. It was well organized, well explained, and revealed enough information as not to make this a 8 hour video but we could walk away feeling that we know almost everything about how and why you're where you're at today. The restaurant consuming you is very much why I quit commercial fishing. You make your love and passion your job and one day it’s just a job. You’re burnt out ! You have to do this and you have to do that to survive and all the fun is gone. Glad you’re living life much more on your terms. Great story. ! I got into the food service late in life. 26 yrs of age. And ended up being in a four star dining. I really liked the cooking part but all the other head aches, like staff, food cost, no time off etc..... So I got out of it. Now I'm 64 and love to cook, but not for a living.. Good on you......... I totally get where you are coming from. I did restaurant work for about a year and then decided I didn't like the pace. I still love to cook, but I'm just not interested in doing it for a career.
I really enjoyed this one. Cool to hear some back story. As tattoos go I am also in my 40’s and I’m still getting them. I didn’t hit it as hard as you did though so I still have some real estate left. I get them for me and I don’t really explain mine either. I’m just glad they are accepted now unlike when I got started and it was still a bit taboo.

I loved the part about paying your dues. As a new ER nurse in the 90s, I had a charge nurse that was brutal. She made the “new guy’s” life miserable. But once I proved myself and showed I belonged there, she would move on to the next new guy. I think we do need to have some of that return. It makes a person tough and not so easily offended. Too many younger people don’t get that the world is a hard place and people aren’t going to give you your way just because.
@@CookingWithClams I think what people don’t realize is you can be the best chef and still fail because the business aspects aren’t there. Managing costs and managing people aren’t easy. I see a bunch of crappy fried seafood restaurants that are doing well because they figure out their costs. There is a restaurant in famous for their shrimp “local” but I see their suppliers drop off boxed frozen FARMED shrimp!!
Aloha Will. This hit so close to home, as well as Aaron’s decision. I got out of the industry at 55. Always front of the house. Tried to do guided fishing in between. Ditched that as well. It literally sucked the life out of me, and cost me my passion for food, wine, fishing, and especially people. Unless you’re in the industry, I honestly don’t think people comprehend what you deal with on a day to day basis. There is a reason why industry people abuse substances, whether it’s alcohol, weed, or worse, just to wind down. I know it can be good money, because I’ve made it, but is it worth it? Not to me.
You just hit a really good point. At the end of your workday you’re so spent and it’s usually so late. The only thing open is a Bar so you sit and drink your day away. It’s a very difficult lifestyle to balance. I commend the people who are able to do so.
Will, thank you SO much for being vulnerable and opening up about your story. I’ve never asked the questions, but I’ve often wondered what it would be like to share a meal with you (and Aaron and Madeline) and talk about life. I’m kinda fan girling now. 😂 Question: Do you and your family celebrate the feast of the seven fishes, and if so, have you incorporated any of the key west bounty into your dishes?
I've been following you for awhile now and I love your videos. You've changed my mind about how to use the entire fish. I used to take so much good fish and grind it into chum. Love the recipe. Love the story of your history and the rewarding path you are on - it really does show in these videos in your approach to life and cooking. Sustainability, bycatch, cooking what you catch and avoiding waste, avoiding discarding parts of the catch that are perfectly edible. The restaurant consuming you is very much why I quit commercial fishing. You make your love and passion your job and one day it’s just a job. You’re burnt out ! You have to do this and you have to do that to survive and all the fun is gone. Glad you’re living life much more on your terms. I’m thankful for your art showing me different ways of thinking about cooking and eating.

I got into the food service late in life. 26 yrs of age. And ended up being in a four star dining.
I really liked the cooking part but all the other head aches, like staff, food cost, no time off etc.....
So I got out of it. Now I'm 64 and love to cook, but not for a living..

I really enjoyed this one. Cool to hear some back story. As tattoos go I am also in my 40’s and I’m still getting them. I didn’t hit it as hard as you did though so I still have some real estate left. I get them for me and I don’t really explain mine either. I’m just glad they are accepted now unlike when I got started and it was still a bit taboo.

I loved the part about paying your dues. As a new ER nurse in the 90s, I had a charge nurse that was brutal. She made the “new guy’s” life miserable. But once I proved myself and showed I belonged there, she would move on to the next new guy. I think we do need to have some of that return. It makes a person tough and not so easily offended. Too many younger people don’t get that the world is a hard place and people aren’t going to give you your way just because.

It can be a nightmare. And it really does take putting in 110% of yourself into the business to make it succeed.
@@CookingWithClams I think what people don’t realize is you can be the best chef and still fail because the business aspects aren’t there. Managing costs and managing people aren’t easy. I see a bunch of crappy fried seafood restaurants that are doing well because they figure out their costs. There is a restaurant in famous for their shrimp “local” but I see their suppliers drop off boxed frozen FARMED shrimp!!

Aloha Will. This hit so close to home, as well as Aaron’s decision. I got out of the industry at 55. Always front of the house. Tried to do guided fishing in between. Ditched that as well. It literally sucked the life out of me, and cost me my passion for food, wine, fishing, and especially people. Unless you’re in the industry, I honestly don’t think people comprehend what you deal with on a day to day basis. There is a reason why industry people abuse substances, whether it’s alcohol, weed, or worse, just to wind down. I know it can be good money, because I’ve made it, but is it worth it? Not to me.
You just hit a really good point. At the end of your workday you’re so spent and it’s usually so late. The only thing open is a Bar so you sit and drink your day away. It’s a very difficult lifestyle to balance. I commend the people who are able to do so.
Will, thank you SO much for being vulnerable and opening up about your story. I’ve never asked the questions, but I’ve often wondered what it would be like to share a meal with you (and Aaron and Madeline) and talk about life. I’m kinda fan girling now. 😂
Question: Do you and your family celebrate the feast of the seven fishes, and if so, have you incorporated any of the key west bounty into your dishes?
We used to at my aunts house but haven’t kept up with the tradition as of late. I’m thinking this is a perfect time to bring it back!
I've been following you for awhile now and I love your videos. You've changed my mind about how to use the entire fish. I used to take so much good fish and grind it into chum. Now I don't and that's because of you. I hope to run into you one day. If you are ever in the Palm Beach area let me know and I'll get you out fishing for some unique fish.
