These heavenly keto vegan kale crackers have been my go-to snacks. They are soooo easy to make and are packed with all the goodness from nature. I hope you enjoy them x

INGREDIENTS
--------------------
60g fresh kale (washed and dried)
1 cup (120-140g) mix nut and seeds
2 tbsp chia seeds (whole or ground)
½ tsp salt
1-2 tbsp water (add 1 tbsp at a time and check the consistency)
2 tbsp nutritional yeast (or grated vegan cheese)
1 tbsp lemon juice
Sesames (to sprinkle)
DIRECTIONS
--------------------
1. Combine fresh kale and lemon juice in a food processor and blitz finely.
2. Add in the remaining ingredients (leave out sesames) and blitz till the mixture resembles finely ground pesto paste. Leave the mixture to rest for 10 minutes.
3. Spread the mixture between two pieces of baking sheets and roll out till it is cracker-thin. Cut into desired shapes and place on a lined baking tray. Sprinkle with sesames (optional).
4. Bake in a 90-100C (200-210F) pre-heated oven for 60-80 minutes. Flip the crackers upside down half way through baking time if required.
5. Leave to cool and enjoy! x

Wow, these crackers look great & easy to make. I’m going to try making them. I’m glad you used seeds, cause I can’t eat nuts. No nuts mean I can’t eat anything made with almond flour. Anyway, I’m sure my husband will like the crackers cause he loves cooked kale. Thanks.

I've tried your fries recipe, I'm about to try your bread and pasta recipes, and I've also taken a "bread" chaffle recipe I got from Serious Keto and modified it with vital wheat gluten. BIG difference! BTW, where are you from originally? Your accent is (a quite lovely) British, but also with a mix of of Singaporean? I used to live there. Keep up the good work!

How do you store these, looks yummy.
I keep them in an air-tight container (after they're completely cooled). They keep really well.

I just made this I hope they come out as yours. When I rolled the dough did not look as thick or quantity as yours🙁. What's the size of your baking tray?🤔
UPDATE: May 3rd the crackers are delicious, but they are not crispy at all!...
I follow the recipe to the t, I measured the ingredients with a scale use the same temperature but they are not crispy 😮 any suggestions?.

I bave an allergy to nutritonal yeast and dont like vegan cheese. Is there an alternative to add a nice flavour?
Looks great but i would have thought baking for that long would destroy all the nutrients in the recipe
Would these be something I could leave in my car for "car snacks"? I'm looking for ideas to replace my car nuts because I eat too many as I'm driving 😄
